There’s long been a tradition in my family to have curry every Saturday. It’s always the best curry ever, and always home made. So here’s my Syn Free Easy Chicken Curry recipe!

For some reason, it wasn’t until recently that I thought to ask for the recipe – turns out, it’s totally syn free and the easiest curry to make!

Serve this curry with a salad and Okre. They’re a real “marmite” vegetable but I love them! I like to dress my salad with a dressing made from lightest mayo, vinegar, garlic and black pepper – really cuts through the spice of the curry.

I find that by having the salad & chickpeas, you don’t need to have quite so much rice. That means you’re cutting down on the amount of carbohydrates you eat and you’re adding some speed.

You can even have this on an SP Day, if you just serve it with the salad and chick peas, or maybe try some cauliflower rice.

If you’re lucky enough to have any left overs, this Syn Free Easy Chicken Curry  heats up really well and is just as good for lunch.

This curry certainly warms up a chilly weekend, and beats buying a takeaway!!

INGREDIENTS

INSTRUCTIONS
  1. Cut the meat off from either side of the chicken thigh bones and place the meat and bone into a large saucepan
  2. Add the onion, garlic and spices and mix well to coat. Add the water and stir
  3. Cook on a medium heat with a lid on, stirring occasionally for 1 hour
  4. Remove the lid after the time and let the sauce reduce and thicken for the last 30 minutes
  5. Serve with rice and your choice of garnish (suggestions above!)

      Curry powder is free, it’s the curry spice blends that can carry syns, as in many cases they contain sugar. Curry powder only contains ground spices (usually turmeric, chilli powder, ground coriander, ground cumin, ground ginger and pepper) which are all free.

      We’ve not tried it in the slow cooker, but I don’t see any reason why it wouldn’t work. It would probably need 5 to 6 hours
