I love pasta. In fact I think I love pasta more than life itself sometimes, and I could eat it at any time, night or day. Maybe that’s one of the reasons I piled on the pounds!
I have PCOS, and losing weight is hard enough, but with added carbs, makes it even harder.
I tend to lose a lot more when I lay off the spuds and pasta, so I’ve been trying to reduce the amount of carbs I eat despite them being a free food.
All of this got me thinking… how could I recreate something classical pasta-centric without losing taste or texture & I came up with these Lasagne Courgette Boats. There is tonnes of speed packed into these Syn Free Lasagne Courgette Boats.
If you want to add even more speed to your meal you could even serve it up with our Syn Free Spiralized Apple and Beetroot Salad.
You don’t even waste the scooped out courgette pulp. Add that to the classical sofrito base, Cirio tinned tomatoes and Turkey mince and we’re on to a winner! This is also Syn Free on the Slimming World Extra Easy Plan (if you use the cheese as part of your A) & would be good for an SP day too. How good is that?
Based on 4 portions the cheese will take up 1/2 of your HEA per portion (or 3 syns per portion if you choose not to use your HEA.
Don’t worry about the Bolognese sauce being very strong in flavour. It needs to be as it’s going in the courgette which will absorb the flavour. Make sure to give the oven tray with a good Spray of Frylight as you don’t want them to stick.
When ever we need to replace oil in cooking we use Frylight. Perfect for everyday frying and cooking, it delivers exactly one calorie per spray, which makes it Syn free! The Sunflower or Olive Oil flavours are ideal for these Syn Free Lasagne Courgette Boats.
