This Syn Free Tomato and Basil Chicken can be rustled up in less than 30 minutes, with just a handful of ingredients. Making it ideal if you’re a bit short of time (and perfect if you’re following the Slimming World or Weight Watchers plan)

Tomato and basil is a great combination for chicken. Fab on it’s own! But add a squeeze of lemon juice and some freshly ground black pepper and it’s perfect!

You can serve this Syn Free Tomato and Basil Chicken with pretty much whatever you want. We like to keep it simple, so we just had spaghetti, tossed in some butter Frylight and black pepper, with a bit of salad for extra speed.

Having said that it’s just as good with some Syn Free Chunky Chips and some veg or salad.

  1. Pre heat the oven to 200°C
  2. Spray a frying pan with some Olive Oil Frylight, turn up the heat and when the Frylight starts to bubble add the chicken breasts to the pan
  3. Cook them for a few minutes, until they start to colour then turn them over and cook for another couple of minutes
  4. Place them in an oven proof dish or tray, then add the tomatoes
  5. Rip up the bail leaves and sprinkle them over the chicken
  6. Cut 3 slices off the lemon and cut each slice in half. Add these to the dish with the chicken
  7. Squeeze the juice of the remaining lemon over the contents of the dish, spray with some Frylight then season with a little salt and pepper.
  8. Cook for about 20 minutes. Check the chicken is cooked thoroughly and serve with whatever takes your fancy
