This Syn Free Tomato and Basil Soup is so quick and simple to make, and full of flavour. If you want to make it suitable for a Slimming World SP day, just leave out the orzo pasta.

We like to top our soups with interesting garnishes. A parmesan “crisp” works really well in this Syn Free Tomato and Basil Soup. Just finely grate a tiny amount of parmesan onto a silicone baking sheet and pop in the oven for a couple of minutes until golden. Leave to cool and it’ll crisp up nicely!

This soup is really easy to make, and just needs some basic kitchen equipment. A herb chopper is a really useful kitchen tool, especially when you have a lot of herbs to chop!

As the title suggests, this Syn Free Tomato and Basil Soup is…syn free! In fact, it’s pretty much a bowl of Speed food.

There are a few things you can use to garnish this soup.

We used the parmesan crisp mentioned above, but you could top with a sprinkle of herbs, or some Healthy Extra A grated cheese, or even some croutons made from your Healthy Extra B!

If you do choose to make the parmesan crisp, don’t forget to syn the parmesan – which is around 1 syn for 5g.

How to I make this Syn Free Tomato and Basil Soup

Step 1

Spray a saucepan with Frylight and cook the chopped onions on a low heat. Add the garlic and cook for 30 seconds.

Step 2

Add the orzo, tinned tomatoes, tomato passata, stock pot, water and dried oregano and simmer.

Step 3

After 5 minutes, add most of the chopped basil and stir. Simmer for another 5 minutes on a low heat.

Step 4

Take off the heat, stir in the remaining fresh basil and serve immediately!

This recipe can be frozen, but please remember to do the following;

- Freeze it as soon as it is cold enough
