Which recipe should I cook first from the new Pinch of Nom book? - Pinch of Nom Slimming RecipesWe can’t believe it’s been over a month since Pinch of Nom: Comfort Food was released! We’ve LOVED seeing Comfort Food in your hands (and kitchens!). Looking through your photos and reading all of your kind comments means the world to us.

How to Make the Most Out of Your Comfort Food Cookbook - Pinch of Nom Comfort Food

If you’ve not used your copy of Comfort Food yet, or if you’re on the lookout for fresh ideas – we’ve got you covered! Inspired by the amazing feedback we’ve had in our incredible Facebook group, we’ve put together a list of the recipes our members are LOVING right now.

From quick dinners and fiery Fakeaways to sweet treats, there’s something for everyone in our round up.

Psst! If you’re a member of our Facebook group, keep an eye out – we might have used your photo…

I want to start with a breakfast recipe

Starting your day with a Comfort Food breakfast means using minimum fuss, easily accessible ingredients in new, tasty ways. Love it or hate it, we’ve used Marmite to create a winning breakfast dish with our Marmite Mushrooms on Toast recipe (it’s been a hit in our Facebook group!).

The sharp, punchy flavours are bound to wake you up with a bang! At only 187 calories per plateful, you’ll never go back to plain mushrooms on toast.

Just look how good Julie Campbell’s mushrooms look…

We love that Julie’s served hers with salad and crusty bread. Ideal to mop up any creamy leftovers!

When we’re after comfort, a sweet breakfast is just the ticket. Our Nutella Baked Oats feel so much naughtier than they are, thanks to their indulgent, cake-like texture.

Using a tasty blend of oats, yoghurt, vanilla, sweetener, eggs and nutella, you can have this no-fuss brekkie ready in under 40 minutes.

Why not prepare these sweet oats by the batch? That way you can freeze and reheat any leftovers and save yourself some time in the morning. Winner!

Oof! Look at this photo from Lorraine Clifford. We’re obsessed with how golden and crispy the top looks – can’t you just imagine taking a hot, chocolatey spoonful?

I want to start with a midweek dinner recipe

Comfort Food is all about getting the whole family around the dinner table. We know everyone has a different definition of ‘comfort food’, so we’ve covered all the bases by including slow-cooked stews, oven-baked pies, cheesy pasta dishes and more.

Our community is at the heart of our cookbooks, and that’s why we’ve included a selection of super popular website favourites, like our irresistible Creamy Lemon Chicken recipe.

With tangy lemon juice and spinach in a creamy sauce, this satisfying dish is surprisingly low on calories (only 192!) and big on flavour. So we think it’d be a great recipe to ‘wow’ the family first!

Just look at Michelle Jackson’s bubbling away in the pan – it’s almost identical to our own photo! Giving the breasts a bit of colour by sealing them on both sides like Michelle has done is super important, as it’ll lock lots of juicy moisture into your chicken.

If you’d rather start off with a family dinnertime showstopper, why not rustle up our Stuffed Pasta Bolognese Bake? We’ve spooned a cheesy spinach mixture into pasta shells to create a hearty, Italian-inspired bake with a difference.

Once your shells are stuffed full of flavour, nestle them on top of the bolognese and bake them in the oven (topped with cheese, of course!) until they’re crispy and golden.

Joy Wiles’ batch looks well fit, we’d love to have a try of these!

I want to start with a sweet or savoury bake

There are plenty of sweet and savoury bakes to choose from in Comfort Food. Using granulated sweetener with the same weight and texture as sugar, we’ve created healthier versions of classic sweet treats like our nostalgic Coconut and Jam Sponge recipe.

This one’s gone down really well in the Facebook group – and rightly so! How jammy and delicious does Sabrina’s batch look? We’d love a nibble on these with a cuppa…

Following in the footsteps of our hugely popular Biscoff Cheesecake recipe, we bet the whole family would flock to sample a fresh batch of these Biscoff Blondies. We’ve combined the signature caramel biscuit flavour with a cheeky hidden ingredient to keep them nice and moist (we won’t tell if you don’t).

At only 146 calories per blondie, it’s a no-brainer to whip these up. You can freeze them, but we’d be surprised if they make it that far. This batch Claire Louise has rustled up looks immense!

If you’re feeling savoury over sweet, we’ve noticed our Ham and Cheese Spinach Swirls recipe getting quite a bit of buzz. These cheesy pastry swirls are SO easy to make and you can rustle them up in less than half an hour, so they’re a great first recipe to ease you into ‘comfort’ cooking mode.

How crispy does this batch from Donna Richards look? Heaven!

I want to start with a Fakeaway recipe

If you’re flicking straight through to the Fakeaway section, you’re in for a treat – we’ve come up with even more ways to make slimming friendly alternatives.

With its rich creaminess and milder flavours, our crowd-pleasing Oven Baked Pasanda Curry recipe would be a great place to get started. Using light cream cheese and a clever blend of spices, we’ve made a go-to takeaway order into a light meal.

Laura’s plated up a couple of delicious-looking portions for her Friday night dinner…

If a creamy sauce is the key to your heart, our I Can’t Believe It’s Not Butter Chicken recipe is another one you’ll love. We’ve used low-fat cream cheese, tender chicken, chopped veggies and plenty of spice to make a flavourful low calorie dinner the whole family can enjoy (with absolutely no butter in sight!).

Don’t believe us? Check out how rich and creamy Michelle Jackon’s portion looks. We love the addition of fresh salad and fragrant fluffy rice.

I want to start with a homemade pie recipe

We can’t really talk about comfort food without talking about the definitive home-baked comfort dish: pie. We’ve got plenty of potato-topped options in our new cookbook, including our blend of two classics – Bangers and Mash Pie.

We’ve filled it with flavours the whole family already loves, and added a crispy, golden brown top. Who can say no to that?

Just look how golden Jordan Aziz’s pie has turned out – don’t mind if we do!

Speaking of classic combinations – if you love steak and chips and you love pie, why not make our Steak and Chips Pie recipe for your first ‘comfort’ dinner? This one’s been super popular in our Facebook group, and it’s not hard to see why.

Don’t you just want to eat ALL of the pie on Samie Beesley’s plate? We’re all about chips and gravy!

If you love a creamy chicken recipe, you’ll love the filling in our Chicken Bacon and Leek Cottage Pie recipe. It’s a hearty dish you can leave to bubble away in the oven, so you aren’t stuck in the kitchen all night. Ideal for family time!
