Salmon Recipes for Summer
When the sun is shining and you’re not sure what to eat, there’s something about a fish dish that feels lighter and more summery than other options. High in protein and packed with healthy omega-3 fats, there are plenty of good reasons to add more salmon into your weekly menu.
The flaky pink fish can be eaten smoked, grilled, roasted or pan-fried, with a wide range of tasty accompaniments. To prove just how versatile it is, and to inspire you to try some new recipes this season, we’re rounded up a few of our favourite salmon recipes for summer.

Spicy Salmon Skewers with Couscous
It’s impossible to look at these Spicy Salmon Skewers with Couscous and not instantly feel summery! Sunshine on a plate, our 20-minute recipe pairs a packet of instant couscous, fresh veggies and fragrant herbs with chunks of salmon fillets.
This really couldn’t be simpler to rustle up, and the herby yoghurt dressing is the perfect finishing touch. Blitz the ingredients together in a blender and drizzle it over your salmon and couscous for a taste of holiday, in the comfort of your own home.
You’ll need to pick up some wooden skewers for this recipe. You should be able to find them in your usual supermarket, although you can also order a large pack online like this one from Amazon. Remember to soak them well before putting them in the oven, to avoid them burning.
Chilli and Lime Baked Salmon
When it’s warm out, the last thing you want is to have the oven on for hours and hours. Luckily, this Chilli and Lime Baked Salmon is roasted to perfection in just 15 minutes. The salmon and peppers all go in together on one baking tray, so there’s minimal fuss and less washing up afterwards (which means more time sitting out in the sunshine!).
Thanks to sharp, zesty limes and vibrant fresh chillies, we’ve managed to load up the salmon fillets with plenty of flavour, without adding tonnes of extra calories. Serve with a simple side salad, rice or potatoes for a simple-yet-satisfying dinner.
Smoked Salmon Spaghetti Carbonara
It’s far from traditional, but our slimming-friendly Smoked Salmon Spaghetti Carbonara is 100% delicious. Made using ready-cooked hot smoked salmon fillets, this one’s ready in just the time it takes for your pasta to cook.
The creamy, cheesy sauce comes together with just a few simple ingredients, and you can throw in frozen peas to keep it cheap and cheerful! At just 314 calories per portion, we love to eat this in the garden – set the outdoor table for an Italian-inspired al fresco meal.

Salmon Fish Fingers
There’s no denying that these Salmon Fish Fingers are super tasty at any time of the year! Flaky succulent salmon, coated in golden breadcrumbs, they feel like a fancier version of the frozen teatime classic.
Easy to pair with chips, mash, veggies or salad, you can also squish them into a sandwich for a pub grub-style lunch. However you decide to serve them, our top tip is to finish with a squeeze of fresh lemon juice over the top. (Psst…you can also try adding some grated lemon zest to the breadcrumbs for a fruity twist!).
Creamy Tuscan-Style Salmon
Take your taste buds on their summer holiday every time you dish up this Creamy Tuscan-Style Salmon for dinner. A little more decadent than most of our recipes, it comes in at 500 calories per serving – and it’s well worth the indulgence.
Taking inspiration from the flavours of sun-drenched Tuscany, we’ve simmered salmon fillets in a creamy sauce, dotted with sweet roasted cherry tomatoes. Trust us when we say this one’s a crowd-pleaser! It’s so quick to make, it’ll be a recipe you make on repeat all throughout the summer months.

Salmon Burgers
If you fancy a change from beef or chicken, you won’t regret making a batch of these Salmon Burgers. They’re smothered in our homemade twist on tartare sauce, made from fat-free Greek yoghurt with dill and finely chopped gherkins.
Even though you’ll be making the patties from scratch, you’ll be pleased to know this recipe is nice and quick to make. The salmon burgers cook in just 10 minutes, then they’re ready to load onto the bread roll with crisp lettuce and that all-important creamy sauce.
You’ll need a food processor to make this recipe. We like how compact this Kenwood model is. It’s ideal if you have limited kitchen counter space.
Blackened Salmon and Zingy Salad
A fresh twist on salmon and salad, we’ve thrown fragrant spices into the mix to come up with this Blackened Salmon and Zingy Salad. The aromatic mix of herbs and spices is used to create a crust on the top of the salmon fillet. Don’t be afraid to let this take on some colour in the pan – it’s the key to releasing all those punchy flavours.
The salad part of this recipe is nice and simple, with a Mexican-inspired twist. A sprinkle of red chilli, feta cheese, coriander and a squeeze of lime makes sure you get a good zing in every single bite.
