When you fancy a change from bog standard spuds, these Garlic and Parmesan Sweet Potatoes are the answer! Flavoured with garlic granules, onion powder and paprika, you don’t even need to peel the potatoes before cooking.
You can finely slice the spuds with a knife, or grab a mandoline to make easy work of the slicing and dicing. Once they’re layered into an oven dish, they’ll go into the oven to partially bake, before sprinkling on the all-important Parmesan cheese. Just wait until you see (and smell!) that glorious golden crust when they’re all done.
The only tough decision is what else to put on the menu! We love this slimming-friendly side dish served with chicken, but the possibilities are endless – try your favourite vegetarian dish, beef or pork.

We used a 25cm x 18cm oven dish like this one to make this recipe. It’ll come in handy for all kinds of roasts and bakes.

Preheat the oven to 180°C.

Slice the sweet potatoes into 2mm slices. You could use a mandoline to make this easier, or just use a sharp knife.

Arrange the slices of sweet potato in rows along the length of the dish, overlapping each slice.
Step 4
In a small bowl combine the paprika, garlic granules, onion powder, salt and pepper. Spray the potatoes with low-calorie cooking spray and sprinkle over the spice mix.
Step 5
Dot the thyme stalks around the slices of potato and pop the dish into the oven for 40 minutes.
Step 6
After 40 minutes remove the dish from the oven and sprinkle over the Parmesan cheese. Place back into the oven for a further 20 minutes. The potatoes should be cooked through and the Parmesan cheese golden brown. Serve!

You should cook these Garlic and Parmesan Sweet Potatoes until the cheese is golden and the potatoes are tender and cooked all the way through. This will take around an hour.
