All the flavour of a Caprese salad, baked into a succulent chicken breast! We’ve sliced the chicken in a hasselback style, creating pockets that infuse the juicy chicken with fresh, aromatic flavours. 

Drawing on the popular Italian-inspired salad of sliced tomatoes, mozzarella and basil, this recipe is quick, versatile and ideal for a midweek dinner. It uses only really simple ingredients, but builds up plenty of flavour. The honey and balsamic glaze added at the end is the perfect finishing touch!

Serve with a crunchy salad or some steamed veggies for a light, summery meal, that’s delicious any time of the year.

This was a huge hit 😃, unfortunately I didn’t have fresh basil so substituted with dried basil sprinkled liberally across the top. The honey and balsamic glaze gave it a stickiness and great flavour, absolutely scrummy!

I cooked my Caprese Baked Chicken in my acti fry. 200C for 3 x 10 minutes. I also did not have any tomatoes or fresh Basil leaves. So used the chunks of tomato from a can of chopped tomatoes and used dried Basil. Still tasted great.

Place the chicken breasts onto the baking tray. Fill each cut with sliced tomato, mozzarella and the sliced basil. It doesn’t matter what order you do this in, just make sure the ingredients are evenly split between the chicken.

Place the baking tray into the oven for 15 minutes. While the chicken is cooking, mix the balsamic vinegar and honey together in a small bowl.

Use a pastry brush to brush the balsamic mixture over each chicken breast and cook for another 10 minutes. Test that the chicken is cooked through and no pinkness remains. Serve with your choice of accompaniment.

How do you know when Caprese Baked Chicken is cooked?

Ingredients

  • 4 chicken breasts
  • 1 large tomato, thinly sliced
  • 125 g light mozzarella, sliced
  • 5 basil leaves, thinly sliced
  • 1 tsp balsamic vinegar
  • 1 tsp honey
  • ¼ tsp garlic granules
  • salt and pepper, to taste
  • low calorie cooking spray

In the Caprese Baked Chicken are you able to substitute the honey for something else? A family member just can’t eat honey!
