Caprese Baked Chicken - Pinch of Nom Slimming Recipes

For the full list of ingredients and comprehensive instructions, please see the recipe card below. Before you scroll, there’s important stuff in the blurb!

All the flavour of a Caprese salad, baked into a succulent chicken breast! We’ve sliced the chicken in a hasselback style, creating pockets that infuse the juicy chicken with fresh, aromatic flavours.

Drawing on the popular Italian-inspired salad of sliced tomatoes, mozzarella and basil, this recipe is quick, versatile and ideal for a midweek dinner. It uses only really simple ingredients, but builds up plenty of flavour. The honey and balsamic glaze added at the end is the perfect finishing touch!

Serve with a crunchy salad or some steamed veggies for a light, summery meal, that’s delicious any time of the year.

Caprese Baked Chicken serves 2 but ingredient list states 4 chicken breasts. Could this be a typo?

It says to use 2 chicken breasts per person, is this right? For any recipe we only ever have 1 chicken breast each.

Hi if you don’t like cheese what can you stuff chicken with?

      HollyThursday 14th April 2022

Hey Audrey, you could add some extra veggies instead of the cheese. I think a few sliced peppers would be great!
