Fresh, simple and full of flavour, this Tomato, Basil and Mozzarella Salad is exactly the kind of dish you’ll find yourself making on repeat. It’s fab for barbecues, picnics or as a speedy, no-fuss lunch when you need something light and easy to throw together.

Don’t be fooled by its simplicity, this is one of those salads that really delivers on taste. The combination of juicy tomatoes, creamy mozzarella, and fragrant basil makes it the perfect sidekick to just about ANY Italian-inspired meal.

We’ve used mini mozzarella balls here for convenience, but a regular mozzarella ball chopped into bite-sized pieces works just as well. For the tomatoes, go with whatever looks best — a mix of cherry varieties works brilliantly. We used a selection pack from Tesco (which included Yellow and Red Datterini Vine Tomatoes) for extra colour and sweetness.

Ingredients

For the pesto

  • 30 g rocket
  • 20 g fresh basil, stalks and leaves
  • 2 garlic cloves, peeled
  • salt and freshly ground black pepper, to taste
  • 1 tbsp olive oil

For the salad:

  • 100 g reduced-fat diced mozzarella (or mozzarella balls)
  • 200 g cherry tomatoes, halved
  • 20 g fresh basil
  • 50 g rocket
  • 50 g watercress
  • 1 tbsp balsamic vinegar

Good morning to you.
This sounds delicious and perfect for the weather we are having, lunch is sorted today then!
My question is – do you know how long the Pesto would last made up in a fridge? Thinking this would be fab stuffed in a chicken breast or on top of a Salmon fillet.
