Our tasty Duck Salad feels like an indulgent recipe, but is slimming friendly and great if you’re counting calories or following Weight Watchers!

It’s a bit more interesting than Chicken, but it’s something usually associated with Hoisin sauce, or sweet sauces, which, sadly are chocablock with calories and Points which makes me very sad. 

Summer is on it’s way, so we’ve started thinking about Salads. Salads don’t have to be boring, no no no!

Duck Salad | Slimming & Weight Watchers Friendly

This one is pretty fruity, as duck is one of those meats that goes really well with fruit. In there we have Orange segments, Grapes and Pomegranate seeds, a lovely fresh salad which takes no time at all to prepare.

No need to take the skin off the Duck or indeed cut it up! They’re Gressingham mini Duck fillets so the skin is removed already – and are often on the 3 for £10 offer at the supermarket.

If you’re using normal duck breasts you’ll have to remove the skin and slice them into strips.

Cook them for 3 minutes on each side in a hot frying pan, then for the last minute put in the Sweet Chilli sauce. Bingo! A super slimming friendly and exciting salad!

Blue Dragon Sweet Light Sweet Chilli Sauce is lower in Points and calories but you can use whichever sauce you prefer – just make sure you check the nutritional values of whatever you use.

INGREDIENTS

INSTRUCTIONS
  1. Spray a large frying pan with Low calorie cooking spray and put on the heat. Open the packs of duck fillets and season well with the salt and pepper. Sprinkle on some chill flakes if you like a bit of extra heat
  2. Fry the duck for 3 minutes each side, then mix in the Sweet Chilli sauce and stir for one minute. Tip onto a plate and set aside to rest
  3. Place the Orange segments, Grapes, Pomegranate seeds, Radishes, Cucumber, Spring Onions, Tomatoes, and Salad leaves in a bowl. Toss well & dress with the balsamic vinegar
  4. Place salad on a plate & top with the duck pieces. Top with grated carrot & drizzle some of the juice from the salad bowl over the top
