Saag Aloo is one of our favourite side dishes to enjoy with a curry. This slimming friendly, oven baked version is perfect if you’re counting calories or following a plan like Weight Watchers.

Traditional Saag Aloo is a spinach and potato Punjabi dish that is popular in takeaways all across the UK. We’ve removed the ghee (clarified butter) and oven baked the potatoes instead of frying them to create a guilt free version!

Why not try adding some broccoli, Quorn or even chicken to turn this side dish into a delicious, slimming friendly main?

You could also substitute the potatoes for sweet potatoes if you’d prefer – just remember to reduce the cooking time slightly or cut larger cubes as they don’t take as long to cook as normal potatoes do.

This Saag Aloo recipe is suitable for dairy free, vegetarian and vegan diets.

It should also be suitable for gluten free diets but please double check the following ingredients as brands can vary;

How many calories are in this Saag Aloo?

This Saag Aloo is perfect if you’re following a calorie controlled diet and fits well with any one of the major diet plans such as Weight Watchers.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Step 1

Preheat your oven to 220ºC and chop the potatoes into cubes. Finely chop the onion.

Step 2

Place the potatoes in a pan with water and parboil. They should be almost cooked through but still firm.

Drain the potatoes, add the chopped onion and sprinkle over the garam masala, onion granules, garlic granules, ginger, chilli powder, coriander, cumin and lime juice. Toss to coat. Spray with low calorie cooking spray so that all the potatoes are coated.

Step 4

Spray a baking tray or oven proof dish with low calorie cooking spray and spread the potatoes over the tray.

Step 5

Put the potatoes into the middle of the hot oven for around 20 minutes, until the tops have coloured and look crispy. Flip the potatoes over and bake for a further 15 – 20 minutes.

Remove the potatoes from the oven and stir in the spinach while they are still hot so it wilts.

Season with salt and pepper to taste. An optional extra is to sprinkle over some fresh coriander before serving.

How do you know when Saag Aloo is cooked?

You’ll need to bake your potatoes for around 35 – 40 minutes or until they have coloured and are crispy. Make sure to flip them halfway so that they’re evenly crisp.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Saag Aloo in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Saag Aloo in the fridge for approximately 3 days or so.

Can I freeze Saag Aloo?

Yes you can! This recipe can be frozen, but please remember to do the following;

  • Freeze it as soon as it is cold enough.
  • Use a container or bag that is suitable for freezing.

Don’t forget to add a label with what it is, and on what date you put it in the freezer!

How do I reheat Saag Aloo?

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.

From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

  • 750 g potatoes peeled
  • 150 g spinach fresh
  • 1 large onion
