Soup . . . in an air fryer? Okay, so you'll finish off this recipe in a blender, but air-fried roasted vegetables are the key to the gorgeous garlicky flavour. Cream, cheesy and comforting, this is a hearty bowl of goodness that'll warm you right up on a chilly day. A couple of tablespoons of harissa paste give our soup a little kick, and you can add more or less to suit how spicy you like it. Serve with a warm Cheese and Chive Scone (page 164) and you're in for a treat!

‘It was so easy & the taste is so much better than using un-roasted veg. The harissa (Siracha in my recipe) gives it a little warmth without it being spicy and the cheese gives it added flavour and texture without it becoming a cheesy soup.’
