Air Fryer Viking Croquettes
Golden on the outside and delightfully fluffy in the middle, these Viking Croquettes are the dish everybody's talking about. Inspired by the bold flavours from our viral Viking Toast recipe, we've combined punchy mustard with cheese, onion and creamy mashed potatoes, before rolling it in a crunchy layer of breadcrumbs. The results are gloriously crispy, with a heavenly centre that goes down a treat with a whole host of different mains.

If the croquettes lose their shape when dipping in the egg, you can reshape them once they are covered in breadcrumbs before cooking in the air fryer.
Using slightly damp hands when shaping the croquettes will stop them sticking to your hands.
