If you’re already a fan of our Bang Bang Noodles or Bang Bang Pork recipes, you’ll LOVE this one. The best part? It’s super quick to make and there’s hardly any washing up involved…
To keep the calories low, we’ve used a home-made punchy sauce that’ll give your veggies some serious flavour. We’ve thrown carrot, broccoli and courgette into our stir-fry pan, and you can mix up the veggie combinations as much as you want (that’s the beauty of a stir-fry!). We love to use broccoli because it adds a satisfying crispiness to the dish.
Feeling brave? You could use a drizzle of Sriracha sauce or a sprinkling of dried chilli flakes to give this dish even more of a kick. It’s all about the spice!

How many calories are in this Bang Bang Chicken?

Step 1
In a small bowl, combine the sauce ingredients and mix until smooth. Leave to one side.
Step 2
Cook the noodles according to the packet instructions. This will usually take 4 minutes in a pan of boiling water. Drain.
Step 3
While the noodles are cooking, spray a frying pan with low calorie cooking spray. Add the chicken and brown on all sides. This should take around 4 minutes.
Step 4
Add the garlic, ginger and broccoli to the pan and stir fry for 1 minute. Add the chilli, carrot and courgette and stir fry for 2 minutes.
Step 5
Pour in the sauce and, when hot, add the noodles to the pan. Mix well.
Step 6
Divide between two plates and serve.

How do you know when Bang Bang Chicken is cooked?
You should cook this Bang Bang Chicken until the chicken is browned on all sides and cooked through thoroughly. This will take around 8 minutes.
To keep your family safe, the advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes.
How long can you keep Bang Bang Chicken in the fridge?
Once you’ve put it out, ideally you should eat it within 4 hours.

From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

Can I swap the peanut butter powder for Chinese 5 spice?

Hi Sarah, we wouldn’t recommend swapping peanut butter powder for Chinese 5 spice powder. To retain the flavour of the dish, we would suggest using 1/2 tbsp of smooth peanut butter instead. This will increase the calories a little. Hope this helps!

Hi Jude, you can omit the peanut butter powder or on one of our other recipes someone had suggested that there is a nut free peanut butter available from some health food shops and amazon which you could try too. Hope that helps!

Hi Donna, peanut butter powder can usually be found in Asda, Tesco, Ocado, Holland & Barrett, Lakeland, some Aldi stores and Amazon.
