We prefer to make 4 individual portions rather than making one big one. That way you control the amount of cheese you are getting on each portion!

If you want the top to go brown, then just place it under the grill for a few minutes. But, be careful it doesn’t burn.

The sauce is made of cauliflower, and whilst it might sound odd – it really is delicious. You can add some Butter Buds if you want, to give the sauce a buttery taste, but don’t forget each sachet is 10 calories so you’ll have to add that on.

If you haven’t got any Butter Buds you can pick some up on Amazon. They are ideal to flavour foods like potatoes, vegetables, pasta and rice and as a substitute for butter, margarine or oil in cooking and baking.

  1. Fry onion and garlic with bit of low calorie cooking spray for 5 mins
  2. Place the onion and garlic in food processor, add the cauliflower and pulse for 5-10 seconds
  3. Tip into a pan, add the 2 stock cubes and 300ml of water Cook for 20 mins, med-high heat, stirring frequently
  4. Once cooked tip back into the food processor/blender with half of the grated cheese and blend on high for 1 minute
  5. Place the cooked broccoli into an oven proof dish (or you can use 4 smaller dishes to make 4 individual portions)
  6. Season the sauce (and add the Butter Buds if you're using them) Stir, then pour over the broccoli and top with the other half of the grated cheese
  7. Cook in a pre heated oven (approx 200°C) for 20 minutes or until golden brown

  2. Any suggestions on what to serve it with please? Also, is the cauliflower sauce supposed to be thick or runny? Mine was very thick so I thinned it down and I’m not sure now. It’s in the oven as I type!
