Lunchtime just got a little bit more exciting! If you fancy something with a bit of a kick for lunch today, this Cheesy Chilli Toastie is for you. 

It’s hard to beat a classic toastie – crunchy toasted bread and gooey melted cheese is already a winner in our books.

But we’ve added another layer of flavour to this version, packing in some heat by using both fresh chillies and some chilli powder. 

Don’t panic if spicy foods aren’t for you! You can add in as much chilli as you like, so only use a tiny bit if you prefer a subtle heat. 

We’ve made this toastie under the grill but you could also cook it in a sandwich toaster or in a health grill if you have one. 

What diets is this Cheesy Chilli Toastie suitable for?

This Cheesy Chilli Toastie is vegetarian and can be made vegan if you replace the Gouda with a vegan cheese alternative. 

To make this recipe gluten free simply swap the wholemeal bread for a gluten free version. 

This recipe can also be made dairy free by switching the Gouda for a dairy free cheese.

Place under the grill for about 2 minutes or until the cheese is melting. Watch carefully to avoid burning the edges of the bread. Place the second slice of bread on top of the cheese and grill again for about 1 minute or until golden.

Flip the toastie over and grill the other side for 30 seconds to 1 minute, until golden. Cut in half or into quarters if you prefer and serve with a crisp mixed salad. Ingredients

  • 2 thin slices wholemeal bread
  • 40 g Gouda cheese finely grated
  • ½ small red chilli deseeded and finely chopped
  • 1 spring onion trimmed and finely chopped
  • 2 g fresh coriander leaves stalks removed and roughly chopped
  • small pinch of mild chilli powder
  • salt and black pepper to taste

Tip! We used half a small red chilli, which weighed 4g in our toastie. We would say this gave our toastie a mild chilli heat. Chillies vary in size and spiciness quite a lot, so you will need to assess how much to put in to suit your own taste. You can use our quantity as a guide and reduce or increase according to your own taste.
Tip! We used a small pinch of mild chilli powder in our toastie, but again, you may wish to reduce or increase this according to your own taste. If you prefer, you could use mature Cheddar cheese, or half Gouda and half Cheddar cheese and adjust the calories accordingly.
