We’ve wrapped each thigh in lean bacon medallions to keep things indulgent and lighter on calories, then brushed them with a juicy layer of cranberry sauce 10 minutes before they finish baking. Trust us—once you tuck into these succulent thighs, you’ll be in roast dinner heaven!
The flavours are versatile enough to pair with all your favourite seasonal veg. Our go-to is a dollop of creamy mash, roasted carrots and parsnips, and some garlicky sprouts.

Christmas Chicken Thighs are perfect if you’re following a calorie-controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.
As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Obviously, if your goal is to lose weight then you might want to adjust these slightly! You can read more about these recommendations on the NHS website.
Step 1
Preheat the oven to 180°C and line a baking tray with non-stick baking parchment.
Step 2
Squeeze the sausage meat into a mixing bowl, discarding the casings. Add the sage, cranberries, garlic granules, onion granules and thyme. Mix together (we find it’s easier to use your hands so that you can get everything evenly mixed).
Step 3
Lay the chicken thighs out flat and spread with an even layer of the sausage mixture. Roll up each chicken thigh tightly, and then secure with a cocktail stick or skewer to seal in the filling.
Step 4
Place each rolled chicken thigh onto the lined baking tray and, using half the cranberry sauce, brush the top of each. Lay a bacon medallion on top of each chicken thigh.
Step 5
Place into the oven for 30 minutes. Remove from the oven and brush the remaining cranberry sauce on top of each slice of bacon. Return to the oven for a further 5-10 minutes, until the chicken and sausage are cooked through and the outside is turning golden brown. Remove the cocktail stick before serving.
