Pork pies are back on the menu, with our slimming friendly Mini Pork and Stilton Pies!

These delicious, bite sized pies are perfect for party food or made up in the fridge for festive snacking.

We’ve used extra lean pork mince in this recipe, which is a world away from the usual fatty cuts of meat used in a pork pie, meaning each of these pies is only 116 calories each: around half of what you’d find in a shop bought version, and they taste so much better too!

We almost feel like we’re cheating when we serve these Mini Pork and Stilton Pies because they are so simple to make, but they really do look incredible.

What diets are these Mini Pork and Stilton Pies suitable for?

It can be made gluten free as long as you swap out the following ingredients for gluten free versions:

  • Plain flour

Gluten free flour can behave differently to normal flour, so do check the packaging for instructions and adjust the recipe accordingly.

Do you need any special ingredients to make Mini Pork and Stilton Pies?

There are a couple of pieces of equipment we’ve used to perfect these pies: a 24-cup non-stick muffin tray, ideally metal, and a 9cm round pastry cutter for an even pastry shape.

You could also use an adjustable rolling pin if you need precision when it comes to the thickness of dough and pastry.

We’ve also used white vegetable shortening in our pastry, which you can usually find near the butter and includes Trex and Flora White brands.

A 24 cup mini muffin tray is ideal for getting evenly sized pies, and fit the pasty perfectly.

We’ve used a 9cm round pastry cutter for our pies, like one from this set available from Amazon.

How many calories are in these Mini Pork and Stilton Pies?

These Mini Pork and Stilton Pies are perfect if you’re following a calorie controlled diet and fits well with any one of the major diet plans such as Weight Watchers.

In a large mixing bowl, rub the fat into the flour until it resembles breadcrumbs. Add a good pinch of salt.

Make a well in the middle and add the water, stir in until it comes together in a dough. You may need to add a little more water.

Tip out onto a lightly floured board and knead until smooth.

Step 4

Wrap in cling film and refrigerate for half an hour.

Step 5

Preheat the oven to 180ºC and spray the mini muffin tray with low calorie cooking spray.

Step 6

Place the pork mince, onion, sage, Henderson’s relish, mustard powder and 40g of the grated Stilton into a bowl, season with some salt and pepper and mix until thoroughly combined.

Remove the pastry from the fridge and roll out on a floured surface to a 2mm thickness.

Using a 9cm pastry cutter, cut into circles, re-rolling the scraps, until you have 24 circles.

Step 9

Line the mini muffin cups with the pastry, then divide the pork filling evenly between them.

Bake in the oven for 30 minutes.

Step 11

After 30 minutes, remove from the oven and put a small dollop of cranberry sauce on top of each pie, sprinkle the remaining Stilton on top and return to the oven for 5 minutes.

When cooked, leave in the tin for 5 minutes, then run a knife around the edges to gently loosen the pies from the tin.

Serve! They are equally good warm or cold!

How do you know when Mini Pork and Stilton Pies are cooked?

You should cook these Mini Pork and Stilton Pies until the filling is cooked through and is piping hot. This will take around 30 minutes in the oven, plus an extra 5 to melt the cheese on top.

Ingredients

  • 500 g 5% fat pork mince
  • 1 onion finely chopped
  • 1 handful fresh sage leaves finely chopped
  • ½ tsp mustard powder
  • 2 tsp Henderson's Relish or Worcestershire sauce
  • 65 g Stilton cheese grated
  • 6 tbsp cranberry sauce
  • salt and freshly ground black pepper

For the pastry

  • 300 g plain flour
  • 75 g white vegetable shortening e.g. Trex or Flora White
  • a good pinch of salt
  • 7 tbsp cold water you may need a little more
  • low calorie cooking spray

Thank you for the lovely recipe. May I ask what I can use if I cannot get hold of the white vegetable shortening? Is Atora suet the same thing? Thank you.

    Hey Debbie, we haven’t tried this recipe using vegetable suet so can’t guarantee results but it should create a similar texture to the vegetable shortening. Hope that helps!
