Bulgur wheat is found in many Middle Eastern dishes. It’s higher in fibre than most whole grains and slightly lower in calories than other grains, such as brown rice. This salad has lovely Mediterranean flavours. It’s perfect for making in bulk to refrigerate and snack on over a few days – simply hold back the herbs and stir through just before serving.
