Rolled-up Lasagne - Pinch of Nom Slimming Recipes

For the full list of ingredients and comprehensive instructions, please see the recipe card below. Before you scroll, there’s important stuff in the blurb!

Lasagne, but not as you know it! When you fancy a change from the classic Italian-style dinner, our Rolled-up Lasagne brings a bit of fun (and plenty of delicious flavour) to the table.

We’ve made sure to start our recipe with a base of slimming-friendly bolognese, using reduced-fat beef mince to keep the calories down. Rather than layering this up with sheets of pasta, we’ve softened lasagne sheets in boiling water, then rolled them up to sit on top of the meat.

Once each pasta swirl is filled with our cream cheese and spinach mixture, then topped with reduced-fat Cheddar, the whole dish is ready to be baked in the oven until it’s gorgeous and golden.

All in all this takes less than an hour to prepare from scratch, but there’s even more good news! This recipe freezes like a dream – ideal if you want to batch cook it and save a few portions in the freezer for a rainy, lazy day.

What diets is this Rolled-up Lasagne suitable for?

Our Rolled-up Lasagne can be enjoyed on gluten-free diets, as long as you substitute the stock pot and lasagne sheets for suitable gluten-free alternatives.

If you’re cooking for people with allergies, be extra careful when checking ingredients and preparing food!

Hi, Can I ask if this is fresh lasagne sheets or dried? Also could you use dried cannelloni tubes instead?
Thanks

    Hi Catherine
We used dry lasagne sheets and softened them in boiling water so they can be rolled up. You could use fresh lasagne if you prefer.

Hi
Just a quick question I noticed in the ingredients only 8 lasagne sheets are used, yet the photo shows 16 rolled lasagne sheets. Did you double the ingredients or just use extra lasagna sheets?

Hi Amy, our Rolled-up Lasagne does only use 8 lasagne sheets. In step 7, it says to cut each lasagne sheet in half which will give you 16 pieces. Hope this helps.
