Inspired by South East Asian street food Mee Goreng, we’ve stir-fried our Spicy Chicken Noodles in a homemade sweet and savoury sauce. They’re ideal for a quick, slimming-friendly dinner, or they’re light enough to enjoy for lunch.
Noodle dishes are just the ticket when you’re in a hurry, and you can take this recipe from wok to plate in 10 minutes. We’ve added a mild amount of curry powder to our noodles, but there’s nothing to stop you adding more if you’re in the mood for a hotter serving.
To make our street-food inspired dish even more filling, we’ve added crunchy pak choi and spring onions. If you’ve got veggie leftovers looking lonely in the fridge, chop them up and throw them into the wok. The beauty of stir-fries is that they’re quick, easy and versatile!

How many calories are in Spicy Chicken Noodles?
There are 321 calories per portion in Spicy Chicken Noodles, which means they fall into our Everyday Light category.

Step 1
Mix the sauce ingredients together in a small bowl and place to one side.
Step 2
Cook the noodles according to packet instructions, usually around 4 minutes in a pan of boiling water. Drain well.

Meanwhile, spray a wok or large frying pan with low-calorie cooking spray and place over a medium to high heat.
Step 4
Add the chicken strips and fry for 4-5 minutes.
Step 5
Add the curry powder, chilli, garlic, spring onions and pak choi and cook for another 2 minutes.
Step 6
Stir in the sauce and allow it to come to a bubble. Check the chicken is thoroughly cooked; it should be white throughout, with no pink remaining.
Step 7
When the chicken is cooked, add the noodles and toss around for a minute or 2. You want all the ingredients to be well combined and the noodles should be heated through.
Step 8
Serve and enjoy!

How do you know when Spicy Chicken Noodles are cooked?
You should cook this Spicy Chicken Noodles until the chicken is piping hot and white throughout, with no pinkness remaining. This will take around 7-10 minutes of stir-frying.
To keep your family safe, the advice here in the UK is to cook food until it has reached 70°C. It should stay at that temperature for 2 minutes.
