Party food is typically beige, boring, and packed full of calories, but not any more! During the festive season or for those buffet dinners, you just fancy something that’s show-stopping without compromising your slimming plan.

These Veggie Filo Crackers are little parcels of goodness: packed full of crunchy nuts, strong cheese and sweet red onion, they are full of flavour and so easy to make! With only 15 minutes of prep time, they’re the ideal canapes for a dinner party or for popping on the buffet table alongside some of our other luxurious finger food options for a party to remember. Ready-made sheets of filo pastry are used in this recipe because they’re so easy to use, and the only limit to the fillings you pick is your imagination! We have a meat version on the website, but you could also try your favourite festive fillings and experiment a little.

What diets are these Veggie Filo Crackers suitable for?

This Veggie Filo Crackers recipe is suitable for vegetarian diets.

It can be made dairy free as long as you swap out the following ingredients for dairy free versions:

  • Stilton cheese (make sure you pick a strongly flavoured dairy free cheese!)

You can find gluten free filo pastry, but it’s not widely available and we haven’t tested it in this recipe, so we’ve marked it as non-gluten free accordingly.

Please make sure to double or triple check all of your ingredients if you’re cooking for people with allergies.

How many calories are in these Veggie Filo Crackers?

This Veggie Filo Crackers recipe is perfect if you’re following a calorie controlled diet and fits well with any one of the major diet plans such as Weight Watchers.

Preheat the oven to 160 ºC.

Step 2

Spray a small frying pan with low calorie cooking spray and place over a medium heat. Add the onion and red pepper and fry for 10 minutes until softened, stirring occasionally.

Add the mushrooms and fry for a further 5 minutes, until any liquid has evaporated away.

Tip into a small mixing bowl and stir in the Stilton cheese, walnuts, garlic granules and season to taste with salt and pepper. Set aside and leave to cool.

Lay two pastry sheets out next to each other. Place a second sheet on top of each to make two double layered sheets. Cut each sheet into 6 rectangles, approx 15 x 12 cm, making a total of 12 rectangles.

Divide the filling mixture between each filo pastry rectangle, placing it down the middle but leaving approx 2 cm at each end.

Brush egg down one long edge, then roll up, and crimp the ends with your fingers to seal and make ‘crackers’.

Step 8

Place a sheet of baking parchment paper on a baking tray. Carefully place the filo crackers on the tray, seal side down.

Carefully brush all over with egg and place in the preheated oven for 10 – 12 minutes, or until golden.

Leave to cool a little on the tray then transfer to a serving plate and serve warm.

How do you know when these Veggie Filo Crackers are cooked?

You should cook these Veggie Filo Crackers until the pastry is golden. This will take around 12 minutes in the oven.

Ingredients

  • 4 sheets filo pastry approx 45 x 24cm each
  • ½ medium red onion peeled and finely chopped
  • 1 medium red pepper deseeded and finally chopped
  • 100 g button mushrooms finely chopped
  • 50 g Stilton cheese crumbled
  • 20 g walnuts finely chopped
  • ¼ tsp garlic granules
  • 1 egg beaten, to glaze
  • low calorie cooking spray
  • salt and pepper to taste
