Strawberry Daiquiri

Is it even a party if you’re not sipping one of these fruity Strawberry Daiquiris? Their vibrant red colour comes from blending up real strawberries and mixing in lime juice, strawberry-flavoured water and (of course) white rum. The whole mixture gets popped into the freezer until you’ve got a boozy slushie base that you can top up with pink lemonade.

These really look the part when you serve them in martini glasses – especially when you add a cocktail umbrella. Pick up a set of rainbow-coloured brollies to brighten up the drinks table at your Pride party.

Strawberry Mojito Jellies

All the best parties serve jelly! These Strawberry Mojito Jellies are worlds away from the ones you get at kids’ parties, thanks to a good glug of rum! With their pinkish red wibble wobble, you can pop them at the top end of your rainbow-inspired spread.

We love that this recipe can be made as one big jelly or in individual mounds that are perfect for parties. There are just 48 calories in each portion, so it’s the ideal sweet treat for anyone who doesn’t want to fall off the slimming wagon while celebrating Pride.

With their colourful bases, these glass dessert bowls are just the ticket for serving jelly to your guests!

Chickpea Tikka Dip

What’s orange, delicately spiced and perfect for parties? This Chickpea Tikka Dip of course! Not only is it rainbow-bright enough for your Pride buffet table, it tastes delicious too. It’s packed with veggie goodness and just the right amount of curry powder to bring out that moreish tikka taste.

Chop up some brightly coloured peppers, carrot sticks and cucumbers to be dipped in, and you’ve got yourself a snack you’ll be proud to bring along to any party.

Mango Raspberry Ice Cream

A Pride party calls for something bright and cheery – and sweet treats don’t come much more cheerful than this Mango Raspberry Ice Cream. It’s smooth, creamy and naturally dairy-free, with eye-catching yellow and pink colours that are perfect for the occasion.

You only need 4 ingredients and a spare 10 minutes to prepare this recipe – then stick it in the freezer until the day of the party. Serve each guest a scoop of sweet mango ice cream and top with the syrupy berries. Delicious!

You’ll need a food processor to get your ice cream super smooth and silky. One like this from Amazon will come in handy time and time again for chopping veg, making soups and blitzing ingredients.

Chicken and Mango Salad

How about a meal that looks like a rainbow on a plate? We love a fresh, colourful salad and this Chicken and Mango Salad ticks all the boxes – along with lots of crunchy fresh veggies you get the sweet, juicy mango and perfectly seasoned chicken.

Refreshing and light, a little chilli in the salad dressing goes a long way. Chilli and mango are an unexpected but delicious combination – trust us, it really works! This is far from your average salad and it’s guaranteed to be a crowd pleaser.

Very Green Zingy Kale Salad

If your rainbow-themed spread needs a bit more green, we’ve got you covered with this next side dish. It’s so green in fact, that we even put it in the name of the recipe! Our Very Green Zingy Kale Salad is just as zesty and crisp as it looks.

The recipe is dairy free and vegetarian, and it’s really easy to make it gluten free too (just be sure to use a gluten free soy sauce) – ideal if you’re catering for people with different dietary requirements.

Homemade Lemonade

Liven up your Pride party with this citrusy Homemade Lemonade! As well as being a great non-alcoholic option for anyone who’s not drinking, it’s easy to make and deliciously refreshing too.

At 35 calories per glass, this is much more slimming-friendly than other sugary, shop-bought drinks. If you want to get ahead with your party prep, you can make up the lemon syrup in advance, freeze it and then just top it up with water on the day!

Pick up some rainbow paper straws to pop in your glasses! These ones are biodegradable, recyclable and perfect for a Pride party.

Jewelled Giant Couscous

Feast your eyes on this dishful of colour and flavour! Whether you’re putting on a buffet or having a sit down meal, this Jewelled Giant Couscous is a tasty side that goes with everything!

As well as having a pretty colour palette, this recipe is packed full of goodness – there’s loads of veggies tucked up in there, along with giant couscous to really fill you up. It’s vegan-friendly too, just remember to check the stock cubes and balsamic vinegar.

This dish gets a delicious citrusy tang from a spice called sumac. It’s available online and in most supermarkets and it really makes all the difference!

Minty Halloumi and Vegetable Kebabs

Whether your party is indoors or outdoors, you can’t go wrong with serving up some skewers loaded with a rainbow medley of vegetables. These Minty Halloumi and Vegetable Kebabs can be cooked under the grill or popped on the barbecue if the sun is shining.

You could add in whatever vegetables you like – why not try using different coloured peppers to add extra colour? Just wait until you try the fresh, minty yoghurt sauce; it brings the whole dish to life!

Lemon and Blueberry Tarts

How pretty are these Lemon and Blueberry Tarts? We can’t think of any better way to round off your Pride party than with these little bites of creamy blueberry, zesty lemon and crispy filo pastry.

They’re easier to make than you might expect, and low in calories too – only 49 each! You’ll need to make these on the day of the party and serve them fresh from the oven while the pastry is still lovely and crunchy. What a treat!
