We’ve put together some really great tips and tricks to make meal planning a breeze!
Lotus Biscoff American Pancakes
These delicious pancakes are hands down one of the most popular recipes from our new cookbook and for good reason – they’re ridiculously tasty!
We absolutely love the flavours of Lotus Biscoff and there’s no better way to start the day than with a delicious breakfast.
Topped with crunchy biscuits and flavoured with Lotus Biscoff spread, these fluffy pancakes taste super naughty, but they’re actually slimming friendly and really low on calories.
Still not convinced?
Gaynor says, ‘Lotus American pancakes… they are amazing and will definitely be a favourite in our house. Loving the new book.’
If you fancy more of a sweet/savoury mash up, then our Bacon and Maple Blueberry Pancakes are a fab alternative.
Bacon and maple syrup might sound like a weird combo, but the flavours work amazingly together – trust us!
Jammy Dodger French Toast
Our Jammy Dodger French Toast tastes just as good as it looks and it’s an adorable way to start your day.
We use strawberry jam to fill our french toast hearts, but you can use whatever flavour of jam you’d like – cherry, raspberry or even blackcurrant would all work really well!
Served with a dusting of sweet cinnamon and a little icing sugar, this breakfast is super quick and easy to make, but looks really impressive.
It’s perfect for enjoying with that special someone (if you can bring yourself to share that is!).
Make sure you give our French Toast recipe a go too – it’s super simple, but packed full of flavour.
Pizza Pasta
We love pizza and we love pasta too, so we thought why not combine them together?!
With all of the flavours of a pepperoni pizza in a gooey pasta bake, this is another recipe that’s been a firm favourite from our third book.
Pepperoni might be a really popular pizza flavour, but as this recipe is really versatile, you can use whatever toppings you want (as long as you make sure they’re cooked before you add them to your sauce!).
Why not try using a range of mixed veggies, chicken and sweetcorn, or ham and pineapple instead?
One of our fab community members, Sophie, said, ‘This was INCREDIBLE and so comforting and as it’s quick and easy to make it’s the perfect midweek dinner too!’
Creamy Tuscan Chicken
Another recipe that’s ideal for a quick, midweek dinner is our Creamy Tuscan Chicken which uses a handful of simple ingredients to make a delicious, flavourful dish!.
We may not be able to go on holiday at the moment, but that doesn’t mean that we can’t enjoy the flavours of France at home!
Ready to serve in half an hour, this dish has a really tasty, rich sauce and, if you’ve got a busy week ahead, it’s also perfect for making in batches and reheating for a super speedy meal.
If you fancy a change, then try using pork steaks instead of chicken breasts – the creamy sauce works really well with either protein.
Our Creamy Cajun Chicken Pasta is another midweek winner and is packed full of flavour along with loads of veg.
Crispy Chilli Beef
A true fakeaway favourite in our house, this recipe might seem like it has a lot of ingredients at first glance, but we promise that it’s totally worth it!
This Crispy Chilli Beef tastes just like the dish you’d get from your local takeaway, but it’s much lower in fat and calories.
We’ve also popped some extra veggies in there too to help fill you up.
For maximum crispiness, add your beef to the sauce at the last minute so that it gets nice and coated, but doesn’t go soggy.
You can also find this Crispy Chilli Beef recipe on our website if you prefer referring to a screen while you cook!
Baked Chimichangas
You might be thinking that there’s no way that a deep-fried burrito could ever be slimming friendly, but our Baked Chimichangas are surprisingly low on calories.
We’ve baked this recipe in the oven to keep the calories low without sacrificing those indulgent flavours, and it’s a fantastic way to use up any leftover chicken that you might have in your fridge.
A refreshing pico de gallo and a bit of Greek yoghurt really helps to take this dish to the next level, and it’ll be a family favourite in no time.
Becky loved it too and she says, ‘My absolute favourite so far and I have loved everything I have tried! I 100% recommend.’
If you’re in the mood for something similar, then our Beef and Bean Burrito Bake is guaranteed to hit the spot.
Swedish Meatballs
This popular meatball dish is almost famous and our version reduces the fat and calories without compromising on flavour.
These delicious meatballs are simmered in a creamy Dijon sauce and – in our opinion – are best served with thinly sliced cucumber, a sprinkle of dill fronds and some cranberry sauce to really boost the Scandinavian feel.
Alongside some mashed potato and extra veg, our Swedish meatballs are the perfect way to warm up on a chilly evening.
They might be low on calories, but we promise that they’re just as good as the big name ones and Samantha agrees too: ‘The Swedish Meatballs from the new book were amazing!!! And the gravy was delicious as well!!’
Chocolate Banana Muffins
Chocolate and banana is such a good combo and these Chocolate Banana Muffins are so indulgent that you’d never guess that they were slimming friendly.
One of our community members Nicole tried them and this was her review:
‘Made the Chocolate & Banana Muffins this morning in an early bake session, they’re absolutely delicious! Will defo be making them again. Love the fact we can still eat delicious cakes without over half the fat/calories.’
These cakes are perfect for enjoying as a quick breakfast on the go, or as an afternoon snack with a cuppa.
You could also serve them for dessert with some low calorie ice cream for an extra special treat – muffins are such an easy thing to make and we love them!
Make sure you try our Banana and Peanut Muffins too.
