I love Baileys, and these 1 Syn Baileys Tarts are a fab way of enjoying my favourite tipple without using up loads of Syns.

If you’ve still got some Christmas Baileys lurking why not give these a go – it’s hard to believe you can eat these and follow the Slimming World diet plan! They are so quick and simple to make, you’ll be able to whip up a batch in no time.

You will need a mini muffin tray to make these 1 Syn Baileys Tarts. If you don’t have one you can pick one up on Amazon

As you will probably know Slimming World have brought out some new recommendations regarding the syn value of granulated sweeteners. Slimming World have confirmed what this change means.

Where there is 1 tbsp or more being used per serving they recommend members count 0.5 Syn per tbsp. If using smaller amounts, like a pinch or teaspoon, there’s no need to worry about Syns at all.

The recipe for these 1 Syn Baileys Tarts uses 2 tablespoons of sweetener and is divided into 24 portions. That’s  a tiny amount per portion, so there’s no need to add any syns on for the sweetener itself.

When ever we need to replace oil to cook things in the oven we use Frylight. Perfect for everyday frying and cooking, it delivers exactly one calorie per spray, which makes it Syn free! Filo pastry would normally be brushed with melted butter before cooking. That means the Butter Flavour is an ideal replacement for these 1 Syn Baileys Tarts.

  1. Preheat the oven to 160 degrees. Cut the Filo Pastry into 48 squares
  2. Spray a mini muffin tin with Frylight and place 24 of the Filo squares into the muffin cups. Spray again and place the remaining Filo into each cup
  3. Spray again with Frylight and bake for 5 minutes
  4. Meanwhile, in a jug whisk the eggs, sukrin gold and Baileys to form a custard
  5. Once the tarts are browned, filled with the Baileys custard and cook for a further 12 minutes
  6. Once cooled, dust over some Sukrin Icing Sugar and serve!

  1. Love all your recipes….make lots of them, but as diabetic would really like to know how many carbs in portions. I am sure there are many diabetics on slimming world would value this

      These Baileys Tarts should be stored in an airtight container and can be kept in the fridge for up to 48hrs. (They never last that long in our house, though!)

  3. Hi, this may sound like a silly question, but I am getting ready to make these for a taster session, and I need to know what size squares to cut the pastry into to make it correct. I don’t want to ruin the pastry and have it turn out wrong.

      You need to cut each sheet of Filo into 24 squares, so just do it by eye. (It may help to recall your times tables from school days!) 😉
