You really can’t tell that these are made with wholemeal bread – the mincemeat just makes them taste like the familiar mince pie you’d expect.

This Mini Mince Pies recipe is suitable for vegan, vegetarian and dairy free diets.

It can be made gluten free as long as you swap out the following ingredients for gluten free versions;

  • Wholemeal Bread
  • Mincemeat

Another essential piece of equipment to help make Mini Mince Pies is a decent rolling pin. You need to make sure the bread is an even thickness. We use one of these nifty rolling pins from Joseph Joseph, which you can find on Amazon.

How many calories are in these Mini Mince Pies?

There are 18 calories per portion in these Mini Mince Pies, which means they fall into our Everyday Light category.

This Mini Mince Pies recipe is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Step 1

Preheat the oven to 200°C.

Step 2

Remove the crusts from the bread, then roll each slice out so they are 2mm thick.

Step 3

Using a 5cm pastry cutter, cut out 12 discs of bread.

Step 4

Spray the tin with low calorie cooking spray and push the discs of bread in the holes to make little cups. You’ll have to press firmly as they’ll probably bounce back.

Step 5

Spray again with the low calorie cooking spray and place in the oven for 4 minutes.

Step 6

Finely chop the apple into very small pieces, and mix with the mincemeat in a bowl – set aside.

Step 7

Remove the tray from the oven and spoon in the mixture into the bread cups. Return to the oven for a further 4 minutes.

Step 8

Allow to cool before serving, and dust with a little Sukrin Icing or icing sugar.

How do you know when the Mini Mince Pies are cooked?

After prep, the mince pies should be placed in the oven for 4 minutes. Then, after inserting the finely chopped apple and spooning the mixture into the bread cups, they should be returned to the oven for a further 4 minutes.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Mini Mince Pies in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Mini Mince Pies in the fridge for approximately 3 days or so.

Can I freeze Mini Mince Pies?

Yes you can! This recipe can be frozen, but please remember to do the following;

  • Freeze it as soon as it is cold enough.
  • Use a container or bag that is suitable for freezing.

Don’t forget to add a label with what it is, and on what date you put it in the freezer!

How do I reheat Mini Mince Pies?

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.

From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then turn. Cook for a further 5-7 minutes until piping hot.
