2 Syn Chicken and Mushroom Pie | Slimming World

Since starting on Slimming World one thing we miss is pie. We’ve not had any pastry since the end of January, so we thought we’d try making an alternative. This 2 Syn Chicken and Mushroom Pie is what we came up with.

For the full list of ingredients and comprehensive instructions, please see the recipe card at the end of this post. Before you scroll, there’s important stuff in the blurb 👍

Now, we know there’s probably a lot of Slimming World friendly pies made with filo out there, but this is our version (so it’s obviously our favourite!)

As we know, shortcrust and puff pastry are quite high in syns, so Filo is a pretty good low syn alternative to what you would use for a more traditional pie. In fact you’d probably save around half the amount of syns if you switch to filo.

Whenever we need to replace oil in cooking we use Frylight. Perfect for everyday frying and cooking, it delivers exactly one calorie per spray, which makes it Syn free! The Butter flavour is ideal for this 2 Syn Chicken and Mushroom Pie recipe.

#mymindfulseptember number thirteen: treat. So usually on weigh night I would go wild and eat chocolate and whatever I want for tea, but with my new found willpower and desire to lose weight for the christening ive had this, a “treat” for only 2 syns! #pinchofnom chicken and mushroom pie (to which I added garlic because it just felt right!) With frylight roasties and sweet corn. Not as much speed as there probably should be but there are onions and mushrooms in the pie 😊 feeling so positive at the moment! #slimmingworld #slimmingworldjourney #slimmingworlduk #slimmingworldfriends #slimmingworldfamily #slimmingworldfollowers #slimmingworldmafia #slimmingworldfollowers #slimmingworldideas #weightloss #weightlossgoals #weightlossjourney #healthylifestyle #healthy #healthyfood #healthyeating #healthyextras #healthychoices #healthylifestyle #sw #swuk #swfamily #swinsta #swmafia #slimmingworldmums #slimmingworldpostpartum

INSTRUCTIONS
  1. Spray a pan with some Butter Frylight, sauté the onion and chicken until they start to colour
  2. Add in the mushrooms and continue to cook until the chicken is almost cooked through (it should take about 10 minutes)
  3. Add the white wine vinegar, Worcestershire Sauce and stock. Stir and allow to reduce slightly. Mix the cornflour with a little water, then stir this into the mix until it's thickened
  4. Remove from the heat and allow to cool for a minute or two
  5. Pre heat the oven to 180°C
  6. Stir the Quark into the pie mix. Check the seasoning and add some sea salt and freshly ground black pepper if necessary
  7. Pour the pie filling into an oven proof dish (we used a 19 cm shallow dish but you can use a smaller deeper one if you want)
  8. Take one sheet of filo, lay it out flat and spray generously with Butter Frylight
  9. Cut the sheet into 8 even pieces. Scrunch each piece up lightly then place them on top of the pie filling. Try to leave as fewer gaps as possible
  10. Spray with a little more Frylight
  11. Place the dish on a baking tray (just in case it drips) and cook for 15 - 20 minutes or until the filo is golden brown and crisp all over
  12. Remove from the oven and serve

    1. Hi Amy
The filling can certainly be frozen. If you were to add the filo on top you would probably have to put it on then freeze it before cooking

  1. I love making this but always seem to waste a pack of filo as they don’t come in individual wrapped sheets.
    Any tips for this?

    1. Hi Jemma,
You could try buying the chilled filo then divide the remainder up into portions and freeze it so you can defrost what you need next time

  2. Made this for dinner tonight. I used left over ham instead of chicken and added carrots, roasted baby potatoes, and some sage and thyme. Wowee, it was amazing! The family were licking their plates clean! There was fights for seconds!
