If you’re following a diet like us you’ll quite often get bored of scrambled eggs and omelettes for breakfast…there’s only so many ways to cook an egg, so these Breakfast Bakes are a great way to add a bit of variety.

They are really quick and easy to make!

You can even prepare them the night before (minus the egg of course) and leave them in the fridge so all you have to do is crack the egg on top and pop them in the oven or microwave them in the morning.

What diets are these Breakfast Bakes suitable for?

These Breakfast Bakes are suitable if you’re gluten free.

You could also enjoy this recipe if you’re dairy free by leaving out the cheese or using a dairy free alternative.

Please make sure to double or triple check all of your ingredients if you’re cooking for people with allergies.

Vegetarians can switch the bacon for a chopped veggie sausages to make this dish meat free!

Do you need any special ingredients to make Breakfast Bakes?

The short answer? Absolutely not! The good thing about this recipe is you can use add or leave out whatever ingredients you want.

You could add some onion or sliced sausage. If you like it a bit spicy you could add a few drops of hot sauce or a pinch of paprika. The options are endless.

You can also layer the ingredients in any order you want, just don’t put the egg on the bottom!

Tasty and filling!
I quadrupled the ingredients and made 1 big bake for our family of four. Even my fussy 6 year old wolfed it down! You could also serve this for lunch.

Added 2 vegetarian sausages cut into pieces.

I added some diced chorizo and fried it off with the bacon and mushroom to give it even more flavour!

Alternative
As an alternative to beans, use spaghetti hoops. Hubby doesn't like mushrooms so I add peppers and onions. Gives it a really yummy flavour.

Lazy breakfast!
Cut up the bacon before adding to the bottom of the bowl so that you can eat your bake with just a fork for a yummy lazy breakfast!
A fuss free filling breakfast.
I added low fat sausage instead of bacon along with some baby cherry tomatoes for sweetness.

Really easy breakfast bakes! I added a bit of spinach in with the mushrooms and bacon! Hubby said it was delish!!

How many calories are these Breakfast Bakes?

These Breakfast Bakes are great for anyone following a calorie controlled diet, and fit well with any one of the major diet plans such as Weight Watchers.

As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. Obviously, if your goal is to lose weight then you might want to adjust these slightly! You can read more about these recommendations on the NHS website.

Step 1

If using the oven preheat to 190°C.

Step 2

Lightly spray a 2 portion ovenproof serving dish or 2 individual ramekins with low calorie cooking spray.

Step 3

Heat a frying pan over a medium heat, spray with low calorie cooking spray, then add the bacon and mushrooms. Gently fry until they start to colour.

Step 4

Arrange the bacon and mushrooms evenly in serving dish.

Step 5

Spoon the beans over the bacon and mushrooms.

Make a well with the spoon and crack the eggs on the top of ingredients.

Sprinkle the egg with some salt and pepper and top with cheese.

Can you cook Breakfast Bakes another way?

You can cook these Breakfast Bakes in the oven or the microwave.

Don’t forget, cooking times will vary depending on your microwave or oven, the size of dish you use and how you like your eggs, so we’ve given you a rough guide for both.

I like a runny yolk so 15 minutes in the oven was perfect for me!

Either bake in the preheated oven at 190°C for 15 – 20 minutes, or microwave on high for at least 60 – 90 seconds (don’t forget to cover with cling film in the microwave).

Make sure the egg is cooked as you like it and serve!

How do you know when the Breakfast Bakes are cooked?

When cooked the egg on top will be cooked to your preference, any white should be set.

This should take approx 15-20 minutes in the oven, 60-90 seconds in the microwave (high).

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.

How long can you keep Breakfast Bakes in the fridge?

You can keep them prepared (minus the egg) in the fridge for up to 3 days. Make sure they are well covered.

We wouldn’t recommend keeping leftovers as the egg would be over cooked when reheating.

Can I freeze Breakfast Bakes?

We wouldn’t recommend freezing this recipe. It’s really quick to put together and you can always prepare it the night before (minus the egg) and keep it in the fridge if your morning is rushed!

  • 2 mushrooms sliced
  • 20 g reduced fat cheddar cheese grated
  • low calorie cooking spray
