Most of them use… surprise, surprise Diet Coke!

We prefer to use Pepsi Max as we think it thickens better than Diet Coke. You could even use the Pepsi Max Ginger, and there’s more info about that below.

How to make Pepsi Max / Diet Coke Chicken

Making this dish is really easy! Here’s a summary;

  • Brown the seasoned chicken in a heated pan.
  • Remove the chicken from the pan and fry off the onions, ginger, garlic and mushrooms.
  • Once softened add the peppers, baby corn, tomato puree, soy sauce, Worcestershire sauce, vinegar and Coke/Pepsi. Stir and bring to the boil.
  • Stir in the half stock cube and pot and simmer.
  • Once the sauce has started to thicken add the chicken and stir in the spring onions.
  • Simmer until the required consistency is reached.
  • Serve with your choice of accompaniment from the list below.

Do you need any special ingredients to make Pepsi Max / Diet Coke Chicken?

You may have guessed, the Pepsi Max or Diet Coke is the key ingredient in this dish! The 5 Spice is also key for that Chinese flavour, but it’s a common ingredient found in most spice racks. You can also substitute the chicken for pork, or swap for different vegetables if there are any you aren’t fond of.

Can you cook Pepsi Max / Diet Coke Chicken any other way?

This dish doesn’t take long to come together, and the key is to reducing the liquid to a thick syrupy sauce. Because of this we recommend cooking it on the hob rather than in a slow cooker or pressure cooker.

How do you know when Pepsi Max / Diet Coke Chicken is cooked?

The chicken will be cooked throughout. You can cut a piece in half to check that the meat is white all the way through. When the dish is ready the sauce will be thick and syrupy.

This will take approximately 25 minutes on the hob.

Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe. 

How long can you keep Pepsi Max / Diet Coke Chicken in the fridge?

Once you’ve put it out, ideally you should eat it within 4 hours.

If you allow any left overs to cool, make sure to refrigerate in a container with a lid and chill.  You can keep leftovers of Pepsi Max / Diet Coke Chicken in the fridge for approximately 3 days or so. 

Can I freeze Pepsi Max / Diet Coke Chicken?

Yes you can! This recipe can be frozen, but please remember to do the following;

  • Freeze it as soon as it is cold enough.
  • Use a container or bag that is suitable for freezing.

Don’t forget to add a label with what it is, and on what date you put it in the freezer!

How do I reheat Pepsi Max / Diet Coke Chicken?

From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.

From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

INGREDIENTS

INSTRUCTIONS
  1. Spray a frying pan with Low Calorie Cooking Spray and heat gently
  2. Add the chicken, sprinkle with the 5 Spice and season. Stir and cook until the chicken has started to brown
  3. Remove the chicken from the pan, add a few more sprays of Low Calorie Cooking Spray then fry off the onions, ginger, garlic and mushrooms
  4. Cook until they start to soften
  5. Add peppers, baby corn, tomato puree, soy sauce, Worcestershire sauce and vinegar. Stir then add the Coke/Pepsi. Stir and bring to the boil.
  6. Stir in the half a stock cube and the stock pot and simmer, uncovered, for 10 minutes
  7. When the sauce has started to thicken and go a bit syrupy, return the chicken to the pan and stir in the spring onions
  8. Simmer for another 10 minutes. Check the consistency and if it's not quite thick enough simmer for a bit longer, until the required consistency is reached

This recipe can be frozen, but please remember to do the following;

- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
- Defrost thoroughly before reheating (you can use the defrost setting on your microwave.)
- Make sure it is piping hot all the way through before serving.

If making this recipe Gluten Free please make sure to check the ingredients that you’re using

Especially things such as; 

- Stock cubes
- Soy sauce - substitute with Tamari.
- Worcestershire sauce - substitute with Henderson’s Relish.

  1. I can’t have Worcester sauce and usually replace this with either balsamic vinegar or soy sauce in recipes. As you already use these is there an alternative or would you just increase one or both of the others? Thanks

    1. You can increase which ever you like. Have you heard of Henderson’s Relish? It’s a veggie version of Worcestershire Sauce and it’s amazing imo

      The sauce may need reducing to thicken if cooking this in a slow cooker. It’s quite a quick recipe when made on the stove, less than 30 minutes, so it might be better to stick with the method in the recipe 😊

  9. Hi,can I ask a question please, do you mix the stock and stock pot with water or just put the stock pot in as it is and crumble the stock in? I made this once before and it wouldn’t thicken. Thank you

  10. Hi excuse my ignorance but when it says 1/2 chicken stock cube do you make up the stock cube as per packet instruction and then half the amount?

  11. Just thought i’d send this thank you as this recipe is amazing! Hubby can be a bit picky when it comes to peppers but his only comment was ‘very nice but would be better with chicken thighs’ so…… next time I cook this it will be with skinless boneless chicken thighs.

  17. Cooked this for tea last night, it had an odd taste to it i think i will adjust the method as i think the baby corn absorbs the spices and not in a good way.
    I have to say though when i too those out the flavour was awsome. the whole family ate it i’ll definately cook this again and possible freeze for lunch times.
