It’s quick, tasty and mega easy to throw together after a long day at work. The last thing you want to be doing it slaving over a hot stove for hours on end!are a lot of variations of “Diet Coke Chicken” on the interwebs, some of which are a little peculiar. Most of them use… surprise, surprise Diet Coke!
We prefer to use Pepsi Max as we think it thickens better than Diet Coke. You could even use the Pepsi Max Ginger, and there’s more info about that below.

This Pepsi Max / Diet Coke Chicken is perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.
As a guide, an average man needs around 2,500kcal (10,500kJ) a day to maintain a healthy body weight. For an average woman, that figure is around 2,000kcal (8,400kJ) a day. If you don’t eat meat, just make it into a vegetarian version! You could use some Quorn Chicken pieces or even just lots of lovely vegetables. Don’t forget to substitute the chicken stock pot, cube and Worcestershire sauce for vegetarian friendly versions.

How to make Pepsi Max / Diet Coke Chicken
Making this dish is really easy! Here’s a summary;
- Brown the seasoned chicken in a heated pan.
- Remove the chicken from the pan and fry off the onions, ginger, garlic and mushrooms.
- Once softened add the peppers, baby corn, tomato puree, soy sauce, Worcestershire sauce, vinegar and Coke/Pepsi. Stir and bring to the boil.
- Stir in the half stock cube and pot and simmer.
- Once the sauce has started to thicken add the chicken and stir in the spring onions.
- Simmer until the required consistency is reached.
- Serve with your choice of accompaniment from the list below.

You may have guessed, the Pepsi Max or Diet Coke is the key ingredient in this dish! The 5 Spice is also key for that Chinese flavour, but it’s a common ingredient found in most spice racks. You can also substitute the chicken for pork, or swap for different vegetables if there are any you aren’t fond of.
Can you cook Pepsi Max / Diet Coke Chicken any other way?
This dish doesn’t take long to come together, and the key is to reducing the liquid to a thick syrupy sauce. Because of this we recommend cooking it on the hob rather than in a slow cooker or pressure cooker.
How do you know when Pepsi Max / Diet Coke Chicken is cooked?
The chicken will be cooked throughout. You can cut a piece in half to check that the meat is white all the way through. When the dish is ready the sauce will be thick and syrupy.
This will take approximately 25 minutes on the hob.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep Pepsi Max / Diet Coke Chicken in the fridge?
Once you’ve put it out, ideally you should eat it within 4 hours.
If you allow any left overs to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Pepsi Max / Diet Coke Chicken in the fridge for approximately 3 days or so.
Can I freeze Pepsi Max / Diet Coke Chicken?
Yes you can! This recipe can be frozen, but please remember to do the following;
- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
Don’t forget to add a label with what it is, and on what date you put it in the freezer!
How do I reheat Pepsi Max / Diet Coke Chicken?
From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.
