Cauliflower has never been my favourite vegetable. When it’s boiled or steamed it just seems so…..boring. However, when it’s roasted, like in this Low Syn Mediterranean Roasted Cauliflower recipe, or stir fried it transforms into something completely different.

It’s amazing when combined with with Mediterranean flavours, like garlic, lemon and olive oil. Olive Oil Frylight is perfect for achieving those subtle olive oil flavours without the added syns, or you could even use Chilli or Garlic flavoured Frylight if you want a bit of an extra kick.
