As you will probably know Slimming World have brought out some new recommendations regarding the syn value of granulated sweeteners. Slimming World have confirmed what this change means.

Where there is 1 tbsp or more being used per serving they recommend members count 0.5 Syn per tbsp. If using smaller amounts, like a pinch or teaspoon, there’s no need to worry about Syns at all.

The recipe for these Low Syn Mini Banana Cakes with Chocolate Chips uses 2 tablespoons of sweetener. As it’s divided into 32 portions that works out at very little sweetener per portion. Which means there’s no need to add any syns on for the sweetener itself.

INGREDIENTS

INSTRUCTIONS
  1. Pre heat the oven to 180°C
  2. Sift the four and baking powder in one bowl
  3. Add the essence, sukrin 1 and mashed bananas
  4. Add 2 of the eggs and mix well
  5. Separate the other 2 eggs and add the yolks to the mixture mixing again
  6. Whisk the 2 whites until very stiff and gently fold into the mixture
  7. Pour into a 24 cup silicone mini muffin silicone tray sprayed with Frylight and sprinkle the chocolate chips evenly over the top (2 or 3 on each). You will have some mix leftover so you will have to refill the tray once the first batch is cooked so reserve some chocolate chips
  8. Cook at @180°C for about 10 minutes

  1. I made these but mine must be smaller coz I made 56 x I calculated the syn value for mine as well and it works out about 0.5 syns a cake x they’re delicious xx

  3. I made these and just divided into 24 silicone cupcake cases for 1syn each and they were so tasty! Also made a chocolate version by swapping out 10g of flour for cocoa powder and they were delicious as well!

      Yes you can, but you will have to check the conversion rate of sweetener to sugar. Sukrin is a 1:1 ratio so it’s easy to convert, but other sweeteners vary. You will probably find conversion info either on the website of whichever sweetener you are using or on the packaging
