As you will probably know Slimming World have brought out some new recommendations regarding the syn value of granulated sweeteners. Slimming World have confirmed what this change means.

Where there is 1 tbsp or more being used per serving they recommend members count 0.5 Syn per tbsp. If using smaller amounts, like a pinch or teaspoon, there’s no need to worry about Syns at all.

The recipe for these Low Syn Mini Banana Cakes with Chocolate Chips uses 2 tablespoons of sweetener. As it’s divided into 32 portions that works out at very little sweetener per portion. Which means there’s no need to add any syns on for the sweetener itself.
We took these Low Syn Mini Banana Cakes with Chocolate Chips to our Slimming World group Christmas taster. We didn’t really plan on posting the recipe, but they went down really well, and lots of people have asked for it. So here it is.

INGREDIENTS

INSTRUCTIONS
  1. Pre heat the oven to 180°C
  2. Sift the four and baking powder in one bowl
  3. Add the essence, sukrin 1 and mashed bananas
  4. Add 2 of the eggs and mix well
  5. Separate the other 2 eggs and add the yolks to the mixture mixing again
  6. Whisk the 2 whites until very stiff and gently fold into the mixture
  7. Pour into a 24 cup silicone mini muffin silicone tray sprayed with Frylight and sprinkle the chocolate chips evenly over the top (2 or 3 on each). You will have some mix leftover so you will have to refill the tray once the first batch is cooked so reserve some chocolate chips
  8. Cook at @180°C for about 10 minutes

  1. I made these but mine must be smaller coz I made 56 x I calculated the syn value for mine as well and it works out about 0.5 syns a cake x they’re delicious xx

  3. I made these and just divided into 24 silicone cupcake cases for 1syn each and they were so tasty! Also made a chocolate version by swapping out 10g of flour for cocoa powder and they were delicious as well!

  4. Do these freeze ok? Just made a batch and they are delicious….forgot the sweetener and they are still yummy!!

      Yes you can, but you will have to check the conversion rate of sweetener to sugar. Sukrin is a 1:1 ratio so it’s easy to convert, but other sweeteners vary. You will probably find conversion info either on the website of whichever sweetener you are using or on the packaging

  6. Hi there, I don’t have a mini muffin baking tin. Would it be possible to make these in a normal size muffin tin and make less in quantity? Or bake them in paper cases in a bun tray? Thank you. Eve

    1. Hi Sara
      The 9 after the 56g of flour refers to the syn value for that ingredient. All ingredients have their individual syn value shown, so that if you use an alternative brand, you can adjust syns accordingly.

      You could try, but coconut flour is much more absorbent than normal self-raising, so you’ll need to add more liquid to the mixture to stop it being too dry.

    These look delicious! I havent done slimming world in a couple of years. Im not in a position to attend our local class at the mo (working when its on) but want to try hop back on the bandwagon at home. Just wondering the syn value of bananas? Have the syn values of fruit and veg changed lately does anyone know? Its not ideal but I want to try get back on it even if I cant attend for now. May not be perfect but every little helps!

    1. Hi Louise

      Fruit and vegetables are either Free or Speed when eaten ‘whole from the bowl’. There is a list of Speed foods here – http://pinchofnom.com/slimming-world-speed-food-list/

      If fruit is cooked, blended or pureed, it has to be Synned.

      A rough guide is 1 Syn for every 20 calories, but this only works for food that does not have a free food allowance. Also, if it’s not on the app you can work it out using the Syn calculator or the Snackulator on the SW website.

      We don’t allow syn requests in this group, but if you don’t have access to the SW website then there are a number of FB groups dedicated to providing Syn values.

      You can ask for Syn values in the How Many Syns Facebook group. Or you can look at syn values in the Syns Allowed Facebook Group.

  8. Hi all! I made these and they were delicious BUT they didn’t rise at all! They are super flat- could it be because I did them but paper cupcake cases? Thanks for the help!

    1. Hi Sarah
      Yes, the cakes won’t hold their shape as well in paper cupcake cases. You also need to whisk the egg whites really well and fold them in very gently to avoid knocking any air out. Don’t be tempted to open the oven too soon, as that can cause them to not rise as well. 🙂
