Super Low Syn Sweet Chilli Duck Salad With Orange and Pomegranate | Slimming World

duck salad - large

We’re big fans of duck. It’s a bit more interesting than Chicken, but it’s something usually associated with Hoisin sauce, or sweet sauces, which, sadly are chocablock with syns which makes me very sad. Why waste syns on a salad?!

We like to use Sukrin, which is an all-natural granulated stevia sweetener alternative to sugar with zero calories. It doesn’t have that strange after taste that a lot of artificial sweeteners do, which makes it perfect for cooking and baking.

Sukrin is in equal and weight to sugar, so if you're using a powdered sweetener you'll need to use less as it weighs less.

You can grab Sukrin over on Amazon

Summer is on it’s way, so we’ve started thinking about Salads. Salads don’t have to be boring, no no no! This one is pretty fruity, as duck is one of those meats that goes really well with fruit. In there we have Orange segments, Grapes and Pomegranate seeds, a lovely fresh salad which takes no time at all to prepare.

No need to take the skin off the Duck or indeed cut it up! They’re Gressingham mini Duck fillets – and are often on the 3 for £10 offer at the supermarket. Take 3 minutes on each side in a hot frying pan, then for the last minute put in the Sweet Chilli sauce. Bingo! A super low syn exciting salad on the Slimming World Extra Easy plan!
