Syn Free Bolognese Rotolo | Slimming World

Put a new spin on Lasagne and roll it! This one doesn’t star any Béchamel sauce – because that would add syns, and too many syns are bad… right? This Syn Free Bolognese Rotolo is packed with flavour and kind of like Cannelloni on steroids. It’s nowhere near traditional Rotolo, but it will do for us following Slimming World.

It’s one of those dishes that will impress a crowd, it also takes a little longer than a lasagne to assemble, but it’s worth it.

You can use Beef or Turkey mince or even do a vegetarian version with spinach and quark (recipe coming soon).

Before I came across this recipe, I’d never heard of a rotolo (although it’s fun to say!).  But it’s basically a smaller version of cannelloni that’s turned upright and then baked.

The best part about baking it this way is the crunchy browned cheese on top ???? Talking of cheese, this feeds four people and you only use one healthy extra A’s worth of cheese.

Lets chat about the great syn debate of fresh pasta – the choice is yours. Sometimes, we make our own (with no oil) and do not Syn it, but you can cook some dry sheets and use those if you prefer.

  1. Heat a large non-stick frying pan over medium-high heat. Spray with Frylight and cook the mince, stirring, for 4-5 minutes or until browned. Add celery, carrot, courgette, onion, Super Cirio/tomato puree and garlic. Cook, stirring, for 5 minutes or until vegetables soften slightly
  2. Next add the chopped tomatoes ,1/2 tin of water, stock cubes, and Italian Rub/herbs. Cook, stirring occasionally, for 20 minutes- the sauce should thicken. Cool. Preheat oven to 180°C
  3. Meanwhile prepare your lasagne sheets. If they're dry you need to cook them, and cool them down. If you've got fresh or have made your own - continue. Cut the sheets in half length ways. Spread the halved lasagne sheets with the mince mixture - you want a fairly decent coating, but not too much that you can't roll them up! Starting from 1 short side, roll up to form a log
  4. Place some of the mince mixture in the bottom of an oven proof dish - a couple of cm's deep. Place the rolled up sheets end up in the dish. Repeat with the remaining lasagne sheets until they're all in there
  5. Pour the rest of the mince mixture over the Rotolo. Sprinkle with cheese and bake for 35-40 minutes until the pasta is cooked. Enjoy!

This recipe can be frozen, but please remember to do the following;

- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
- Defrost thoroughly before reheating (you can use the defrost setting on your microwave.)
- Make sure it is piping hot all the way through before serving.
