This Bolognese Rotolo is packed with flavour and kind of like a beefed up (all the puns…) Cannelloni. It’s not exactly a traditional Rotolo, but it is a great substitute if you’re following Slimming World, Weight Watchers or Calorie Counting!

This Bolognese Rotolo is a doddle to make, and is a really impressive dinner!

You’ll also need a decent frying pan – it’s definitely worth buying a good one, as it will last you so much longer and save you money in the long run!

There are less than 600 calories in this Bolognese Rotolo recipe which makes it a reasonably low calorie dinner – especially when it is as filling and delicious as this is!
You could serve it with some salad for a light accompaniment!

This Bolognese Rotolo is Syn Free as long as you use one of your Healthy Extra A allowances.

How Weight Watchers friendly is this Bolognese Rotolo?
Pasta dishes can be pretty high in points on the Weight Watchers plan. This Bolognese Rotolo is just 8 Points per portion, which really isn’t too bad at all!
It would work really well with some steamed veg, so why not try something new with it?
Can I freeze this Bolognese Rotolo?
This recipe can be frozen, but please remember to do the following;
– Freeze it as soon as it is cold enough
– Use a container or bag that is suitable for freezing.
– Defrost thoroughly before reheating.
Make sure it’s piping hot before serving!
How do I make this Bolognese Rotolo?
Heat a large non-stick frying pan over medium-high heat. Spray with Low Calorie Cooking Spray and cook the mince, stirring, for 4-5 minutes or until browned. Add celery, carrot, courgette, onion, tomato puree and garlic. Cook, stirring, for 5 minutes or until vegetables soften slightly
Next add the chopped tomatoes ,1/2 tin of water, stock cubes, and Italian herbs. Cook, stirring occasionally, for 20 minutes- the sauce should thicken. Cool. Preheat oven to 180°C
Meanwhile prepare your lasagne sheets. If they’re dry you need to cook them for a couple of minutes until they are flexible but not cooked through, and then cool them down. If you’ve got fresh or have made your own – continue.
Cut the sheets in half length ways. Spread the halved lasagne sheets with the mince mixture – you want a fairly decent coating, but not too much that you can’t roll them up! Starting from 1 short side, roll up to form a log
Place some of the mince mixture in the bottom of an oven proof dish – a couple of cm’s deep. Place the rolled up sheets end up in the dish. Repeat with the remaining lasagne sheets until they’re all in there
Pour the rest of the mince mixture over the Rotolo. Sprinkle with cheese and bake for 35-40 minutes until the pasta is cooked. Enjoy!
