Sometimes you can’t beat a nice bowl of soup! Today is one of those days, we decided to make this souper (haha) speedy Syn Free Cauliflower and Broccoli Soup. Packed full of speed food & perfect for an SP day on the Slimming World Extra Easy plan.

This Syn Free Cauliflower and Broccoli Soup is perfect if you’re looking for something filling when doing either a Slimming World Extra Easy day or an SP day.

We don’t tend to do SP days, we prefer to do extra easy days but with half a plate of speed instead of a third.

It’s worked very well so far, between us Kate and I have lost over 12 stones in under a year. Crazy!

You might be wondering what the white stuff is floating in the soup… that’s a bit of Danish Blue cheese.

The salty blue cheese flavour really stands out against the smooth, fresh taste of the broccoli and cauliflower.

You can have 35g of Danish Blue as one of your HEA choices, and in my opinion, it’s well worth using a bit of it. It’s is of course, entirely up to you!

How do I make this Syn Free Cauliflower and Broccoli Soup?

If we had a scale of difficulty for our recipes, this would be easier than incredibly easy!

Literally, all you need to make this Syn Free Cauliflower and Broccoli Soup is throw ingredients in a pan, cook and then blend.

It really couldn’t be any easier!

For the blending, I’d recommend you use a stick blender or throw it in a blender. As far as stick blenders go, you want one that’s going to last and that has a metal stick.

  1. Spray a pan with Frylight, then sauté the onion until it starts to soften.
  2. Chop up the cauliflower and broccoli into florets, then add these to the pan
  3. Pour in the water, then add the stock cubes
  4. Bring to the boil, stir, then cover and simmer for 25-30 minutes
  5. Remove from the heat, then blitz until smooth using a stick blender
  6. Check the seasoning and add a little salt and pepper if necessary. Serve on it's own, or sprinkled with a little Danish Blue or Stilton (but don't forget to syn accordingly)

This recipe can be frozen, but please remember to do the following;

- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
- Defrost thoroughly before reheating (you can use the defrost setting on your microwave.)
- Make sure it is piping hot all the way through before serving.

If making this recipe Gluten Free please make sure to check the ingredients that you’re using

Especially things such as; 

- Stock cubes
- Soy sauce - substitute with Tamari.
- Worcestershire sauce - substitute with Henderson’s Relish.
- Etc.

      Frying off the onions first will caramelise them and give a slightly sweeter flavour, but it’s not essential if you’re making this in a soup maker. 🙂

  2. Hello, looking forward to trying this. Just wanted to ask, if using frozen broc and cauli should I reduce the amount of water added with the stock cubes? Thanks.

      It shouldn’t make too much difference, but if you’d like the finished soup a little thicker, just reduce it by simmering for a few minutes at the end of the stated cooking time. Hope that helps! 🙂
