We don’t tend to do SP days, we prefer to do extra easy days but with half a plate of speed instead of a third.

It’s worked very well so far, between us Kate and I have lost over 12 stones in under a year. Crazy!

You might be wondering what the white stuff is floating in the soup… that’s a bit of Danish Blue cheese.

The salty blue cheese flavour really stands out against the smooth, fresh taste of the broccoli and cauliflower.

You can have 35g of Danish Blue as your HEA, and in my opinion, it’s well worth using a bit of it. It’s is of course, entirely up to you!

How do I make this Syn Free Cauliflower and Broccoli Soup?

If we had a scale of difficulty for our recipes, this would be easier than incredibly easy!

Literally, all you need to make this Syn Free Cauliflower and Broccoli Soup is throw ingredients in a pan, cook and then blend.

For the blending, I’d recommend you use a stick blender or throw it in a blender. As far as stick blenders go, you want one that’s going to last and that has a metal stick.

INGREDIENTS

INSTRUCTIONS
  1. Spray a pan with Frylight, then sauté the onion until it starts to soften.
  2. Chop up the cauliflower and broccoli into florets, then add these to the pan
  3. Pour in the water, then add the stock cubes
  4. Bring to the boil, stir, then cover and simmer for 25-30 minutes
  5. Remove from the heat, then blitz until smooth using a stick blender
  6. Check the seasoning and add a little salt and pepper if necessary. Serve on it's own, or sprinkled with a little Danish Blue or Stilton (but don't forget to syn accordingly)
