Syn Free Jamaican Oxtail Stew | Slimming World

We were lucky enough to visit the Bahamas a couple of years ago, and were served this on our first night there. Just amazing! So here’s our Syn Free Jamaican Oxtail Stew version.

Oxtail is such an under rated cut of beef, and it’s also extremely cheap not to mention it’s Syn Free on the Slimming World Extra Easy Plan.

You should be able to get 1kg for about £5, and 1kg will serve 4-5 people. You might not see it on display in your local butchers, but ask and they’ll probably have it.

What can I say about the Instant Pot? It’s like a like a slow cooker/pressure cooker hybrid, and it’s probably one of our favourite, and most used kitchen gadgets.

If you’ve never heard of it you really should go and check it out over on Amazon. Imagine the best Slow Cooker in the world, then times that by a hundred. There’s not much that it can’t do!

It’s a slow cooker and a pressure cooker, which means you can cook recipes like this Syn Free Jamaican Oxtail Stew in no time at all.

Remember the pressure cookers of old that would splutter and rock, and make all sorts of scary noises? None of that with the Instant Pot.

Just set the time, close the lid and let it do it’s thing. It even keeps your food warm once it’s finished cooking! How good is that?

You can cook this in the slow cooker, but it’ll take considerably longer (4-5 hours). The pressure cooking function of the Instant Pot is a god send when you’re in a rush.

INGREDIENTS

INSTRUCTIONS
  1. Trim the Oxtail of all visible fat - you will need a very sharp knife. Be careful!
  2. Place the meat into a mixing bowl and season with the all purpose seasoning. Place seasoned meat into a ziplock bag & add the black pepper, gravy browning and 1tsp of minced garlic. Mix well and if possible place bag into the fridge and marinade over night. If you can't do this - it's fine, it just absorbs the flavours better
  3. Spray the Instant Pot bowl with frylight and put into Sauté mode. Brown all sides of the meat, being careful to save the marinade in the bag
  4. Remove the browned oxtail and set aside on a plate. Deglaze the Instant Pot with a bit of the stock, making sure to get all the bits off the bottom
  5. Add one of the chopped brown onions, 1tsp of minced garlic and cook until the onions are soft
  6. Return the Oxtail to the Instant Pot, pour in the remaining marinade, add the Allspice, the bunch of fresh Thyme, Habanero Sauce and the rest of the beef stock
  7. Bring the Instant Pot to the Boil and then put the lid on. Make sure the valve is set to sealing, and set Manual mode for 30 minutes. Once the Instant Pot has come to pressure, the timer will countdown. Leave the Instant pot for an additional 20 minutes after it has done for the pressure to release naturally
  8. Open the Instant Pot and add in the Carrots, tin of Cirio Chopped Tomatoes, the chopped Spring Onions, the other chopped Brown Onion
  9. Place the lid back on the Instant Pot & place into Manual mode for 15 minutes. Once the Instant Pot has come to pressure, the timer will countdown. Leave the Instant pot for an additional 15/20 minutes after it has done for the pressure to release naturally
  10. Add the tin of Butter beans and stir well
  11. If the stew needs thickening place into Saute mode without the lid and reduce for 5 minutes. Make sure to stir often
  12. Serve on a bed of Rice n Peas

    1. Hi Marian, You could try using bone in beef short rib. It wont be quite as rich as it is with oxtail, but it’s a decent substitute.

  1. If you have a local butcher (not a branch of a bigger group) they should be able to get some for you if you order it. It really is a lovely cut of beef.
    My butcher will often keep /get bones for me to make broth. Make friends with your local butcher ????

  2. Want to make this tomorrow – could not find all purpose seasoning today in Morrisons 😣. Fingers crossed I can find it in Tesco tomorrow. Don’t fancy driving 100s of miles to find it!. Will have rondo a different recipe if no luck tomorrow. I always have difficulties finding 1 ingredient from your recipes!. I’m still trying to find PB2 (or even PBfit) – been to Holland & Barret & Asda but no luck 😟

    1. Yeah – managed to find everything. Had to improvise as I don’t have an instant pot and my slow cooker was not big enough for it; just boiled it and put it on lowest setting on electric hob. Very nice – my husband was very impressed too as we love West Indian food. Thanks for recipe. Gave it a 5* rating

  3. OMG thank you for this recipie. I absolutely love oxtail. I even add it to my soups with red lentils and whatever vegetables I fancy in my slow cooker. Remove the meat from the soup pulled all and blitz the veg until they go very smooth. Return the meat to the cream of vegetables and voila! I am so going to cook this … thanks k you very much. And Viva the oxtail lol
