This Lemongrass & Ginger Rice Noodle Soup is really quick and easy to make and is perfect for if you’re counting calories or following a plan like Weight Watchers.

Packed full of veggies and low on calories and Points, this recipe is fantastic for those nights when you get home from work with absolutely no inspiration, or inclination to cook anything more complicated than a bowl of cereal.

A little fresh lime, chilli and some vegetable stock help to balance this recipe and create a beautifully warming, tingly dish. Want a bit more kick to your soup? You can add as much or as little chilli as you’d like and why not experiment by adding chicken or beef as well?

Ingredients

  • 1 bag stir fry veg
  • 100 g rice noodles
  • 750 ml vegetable stock
  • 1 chilli deseeded and chopped
  • 1/2 lime
  • 1 stalk lemongrass bashed with the back of a knife until it is roughly crushed
  • 1 tsp Lazy Garlic
  • 2 tsp Lazy Ginger
  • low calorie cooking spray

Could I substitute the lemongrass for a lemongrass paste?

    Hi Kelly, yes you can use ready prepared lemongrass paste refer to your jar for suggested measurements equivalent to 1 stalk of fresh lemongrass, hope that helps!

Could you add chilli powder or flakes if you don’t have fresh chilli. Or even lazy chilli?

    Hi Natalie, yes you can substitute any of those for the fresh chilli, but be careful! Dried chilli can be much more powerful than the fresh equivalent, so use it sparingly unless you like things firey!

    Hi Jo, If you have any leftovers let them cool and refrigerate in a container with a lid. You can keep leftovers of Lemongrass & Ginger Rice Noodle Soup in the fridge for approximately 3 days or so. To re-heat lace in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
