Quite often, the work day evening arrives and there are many things lacking. Food in the cupboard, inspiration, any inclination to cook. This Syn Free Lemongrass & Ginger Rice Noodle Soup is perfect for those days.
After a busy day, I’ll quite often nip to the shops and see what I can find. You’re nine times out of ten bound to find a lonely, sad looking bag of stir fry vegetables.
Quite often with a sticker on them: REDUCED. SAVE ME FROM THE BIN. DON’T LET THEM DO WHAT THEY DID TO ME MUM. Here is your chance to rescue them from impending bin-laden doom.
By adding a few more bits and bobs, a bit of chilli, garlic and ginger, lemongrass if you’re feeling frisky, you can really make the flavours come alive.
A sprinkling of fresh lime does nothing but wonders. Bulking it out with some vegetable stock makes this meal go an awfully long way too.
The stock really takes the sweet, spicy notes from the chilli and makes it a warming, tingly dish. Perfect for the end of a hectic day.
Of course you can adapt the recipe to your own tastes. Add more or less chilli, include your favourite vegetables, take it further with chicken or beef.
There’s not a lot you can do to spoil this dish. Have a bit of fun with it, get adventurous, break the rules, push the boundaries. Just don’t get overly dramatic writing the recip….oh.
