After a busy day, I’ll quite often nip to the shops and see what I can find. You’re nine times out of ten bound to find a lonely, sad looking bag of stir fry vegetables.


Here is your chance to rescue them from impending bin-laden doom.



By adding a few more bits and bobs, a bit of chilli, garlic and ginger, lemongrass if you’re feeling frisky, you can really make the flavours come alive.


A sprinkling of fresh lime does nothing but wonders. Bulking it out with some vegetable stock makes this meal go an awfully long way too.


The stock really takes the sweet, spicy notes from the chilli and makes it a warming, tingly dish. Perfect for the end of a hectic day.

Of course you can adapt the recipe to your own tastes.

Add more or less chilli, include your favourite vegetables, take it further with chicken or beef.


There’s not a lot you can do to spoil this dish. Have a bit of fun with it, get adventurous, break the rules, push the boundaries.

Just don’t get overly dramatic writing the recip….oh.

How do I make this Syn Free Lemongrass & Ginger Rice Noodle Soup?

Step 1

Fry the chilli, garlic, ginger and the lemongrass stalk for a minute or so in a little Frylight

Step 2

Add the veg and fry for a few more minutes

Step 3

Pour in the stock and add the noodles. Stir and cook for 2 -3 minutes until the noodles are cooked

Step 4

Transfer to serving bowls and squeeze over the juice of the lime
