This Syn Free Mexican Chilli Beef recipe is a little similar to our Syn Free Campfire Stew, but more like a Chilli and uses beef rather than pork.

In terms of cost, it’s probably about the same if you use the same cut of beef as we did. Which makes it perfect if you’re watching the pennies.

You can put what ever speed food you like in it too. We used carrots, celery, onions and peppers. You could add in courgette, butternut squash or swede if you’re not too keen on what we used.

Same goes with the beans. Feel free to substitute with which ever beans you like!

As for serving suggestions, we had these with our amazing Syn Free Rustic Potato Wedges! Delicious.

Ox Cheeks

Don’t let the word “cheek” put you off!!!!

We love ox cheeks as they are so tasty, yet so cheap and incredibly low in fat. They’re very lean. Nearly as lean as a fillet steak – but they’re tough, which means they need cooking for a looooong time.

We’ve said this before, but it’s worth saying it again….Ox cheeks are such an under rated, under used cut of meat.

If you’ve never tried them it’s definitely worth picking some up.

They’re around £7.50 per kilo from the supermarket. Sadly, they’re not that easy to come by, but Morrisons and Waitrose often have them in stock.

Of course, if you don’t like or can’t get ox cheeks, you can use any type of stewing or braising steak.

Why you should use a Digital Pressure Cooker for this Syn Free Mexican Chilli Beef

What can I say about digital pressure cooker’s such as the Instant Pot, Pressure King Pro or Tower Health One Pot? They’re like a slow cooker/pressure cooker hybrid, and they’re probably one of our favourite, and most used kitchen gadgets. It makes cooking this Syn Free Mexican Chilli Beef SO much easier.

This Syn Free Mexican Chilli Beef only takes an hour in the pressure cooker. Which is fabulous if you’re in a rush, or don’t feel too happy about leaving the slow cooker on for a long period of time.

If you don’t have a pressure cooker you can cook this Syn Free Mexican Chilli Beef in a pan on the stove or even the slow cooker, just adjust the cooking time accordingly.

There are a few different digital pressure cookers available. We use an Instant Pot, but we’ve heard very good things about the Pressure King Pro and the Tower Health One Pot Express.

As the name suggests, this is Syn Free, but only if;

  • You remove all visible fat from the ox cheeks
  • Use Frylight to fry – otherwise you’ll need to add Syns!

How do I make this Syn Free Mexican Chilli Beef?

Slow Cooker Method

Step 1

Season the ox cheeks well, then spray a frying pan with some Frylight.

Step 2

Heat up the pan and quickly brown the cheeks on both sides.

Remove the meat from the pan, add the White Wine Vinegar and Worcestershire sauce to deglaze’.

Step 4

Scrape and stir the browned bits from the pan over a medium heat. When most of the liquid has evaporated spray the pan with some Frylifght.

Step 5

Add the onions, garlic, mushrooms, celery and carrots. Cook for a few minutes, until they start to brown.

Step 6

Place the sautéed veg in the bottom of the slow cooker.

Step 7

Add the Ground Coriander, Paprika, Cumin, Smoked Paprika, Chilli Flakes, Tomato Puree, Beef Stock Cube and Tinned Tomatoes.

Step 8

Stir well, then place the sealed Ox Cheeks on top. Put the lid on and cook for 6 hours on high.

Shred the meat using 2 forks (if it doesn’t shred easily you can leave it to cook for another hour).

Step 10

When the meat is cooked and shredded, stir in the peppers and kidney beans and continue to cook without the lid – This will allow the contents to reduce and thicken.

Taste, and add some more seasoning if required. Serve sprinkled with some chopped coriander.

Instant Pot/Digital Pressure Cooker Method

Step 1

When the meat is cooked and shredded, stir in the peppers and kidney beans and set to sauté. Cook without the lid for 20-30 minutes – This will allow the contents to reduce and thicken.

Step 12

Taste, and add some more seasoning if required. Serve sprinkled with some chopped coriander.

  1. Love the recipe. What cooking time is required for cooking it on the hob or oven??. Must be the only person without slow cooker!!

    1. Hi Holly
      You’ll need a casserole dish with a well-fitting lid. Cook for around 2 to 2 and a half hrs on a low setting in the oven. You might need to add a little more liquid during cooking time, as the oven will cause more liquid to evaporate then using a slow cooker or pressure cooker. Just keep an eye and add a little boiling water or even beef stock if necessary.
