This came about after wandering around the supermarket with not a clue what to cook.

Slowly but surely I came about the idea to make Syn Free Rocket and Basil Pesto, Slimming World friendly of course!

There’s not much to say about this other than, it’s really tasty. Even if I do say so myself. Quick, filling, and can be used for a multitude of foods.

Note that this is Syn free when using the pecan nuts as a healthy extra.

Mix the pesto into mash for something different!

You can use the Syn Free Rocket & Basil Pesto with our Syn Free Creamy Mashed Potatoes, just stir a tablespoon of the pesto into your mash to infuse the flavour.

How to make our Syn Free Rocket & Basil Pesto

The only step!

Couldn’t be simpler. Chuck all the ingredients into a blender, and blend until smooth. Done! Serve with pasta, meat, mix into mashed potato, go wild. Enjoy!

      Yes, the recipe makes 2 portions, so you’d be using half your HEb, or 3 syns if you choose not to use the as HEb. Hope that helps.

      As this contains Quark, you should treat it the same way as an opened pot of quark.It will keep for around 48hrs in the fridge. Freezing isn’t recommended. 🙂

      The recipe uses Pecan nuts, rather than walnuts.
      It’s 11 pecan halves for HEb, which would be 6 syns if not using your healthy extra allowance.

      The chickpeas might mean that it would be more of a hummus than a pesto, but it’s certainly worth a try. 🙂

  1. Hi, mine turned out runny and smooth – I suspect due to what I used to blitz it! Though I don’t mind as it tastes lovely! Makes a perfect sauce for pasta. I also used fresh garlic as I couldn’t find the lazy type and it worked fine. But the upshot of the runny consistency is that there is way more than 2 portions – at least for me. I had some on a handful of pasta for lunch and only needed 2 desert spoons! Very yummy

  2. Thanks for this recipe. I was wondering how I could make this in bulk for busy days. Would it work if I blitz all ingredients except for quark and keep in fridge then mix the quantity I require with quark just before using?

      I’m sure that would work. If you scroll to the recipe card and change the number of servings, the quantities will automatically change for you, too!
