With just a few ingredients, you can quickly make this BLT Pasta Salad for a simple lunch, an evening meal or as a side dish. You can even make it up and leave it in the fridge for a couple of days.

INGREDIENTS

INSTRUCTIONS
  1. Remove all the fat from the bacon medallions and cut them into decent sized pieces
  2. Cook them in a pan, with some Frylight and the crushed garlic, until they are nice and brown. Then set aside
  3. Mix the Quark, yogurt and Season All together in a large bowl, then season with some freshly ground black pepper
  4. Add the bacon, tomatoes and pasta to the quark mix and stir well
  5. Stir in the lettuce, check the seasoning and enjoy!

  1. Hi is there anything I could replace the quark with as I’m lactose intolerant an am unaware of an alternative. Would you just increase the yogurt (dairy free of course) to replace it?

    1. Hi Karla,
      Yes you can just increase the amount of yogurt. You could try the new plain Alpro Go On one which seems quite suited for cooking purposes

  3. Do you know roughly how much dry pasta you would need? I don’t want to end up cooking far more than the 500g needed.

  4. Hi how long will this last?? Iv made a big bowl as part of a salad so won’t be using all in one go, delicious what I had last night

  5. Made this for a buffet yesterday. It was lovely, although I added a bit extra of the seasoning. Just had some left overs for dinner tonight.

      You could replace the seasoning with:

      1/2 tsp Garlic Granules
      1/2 tsp Onion Granules
      1/2 tsp Sweet Paprika
      Salt & Pepper to taste

  6. So yummy! I made a huge batch for lunches during the week. I added chickpeas because I’m low on iron, tastes wonderful. When I’m feeling particularly naughty I garnish with my HeA cheese portion 🙂
