This Tomato, Basil and Mozzarella Salad is a great way to liven up a salad, and is really low in Syns, Calories and Points!

This Tomato, Basil and Mozzarella Salad is perfect for BBQs, picnics or a light lunch at home or to take to work, and it really couldn’t be easier to make!
What do I need to make this Tomato, Basil and Mozzarella Salad?
They’re a really useful kitchen gadget to have and we use one for loads of recipes, like these Low Syn Chicken Kievs!
You’ll also need some simple, but tasty ingredients!
First of all, you’ll need some cherry tomatoes. You can use whatever type you like; run of the mill cherry, baby plum etc. We used a selection pack from Tesco, which included Yellow and Red Datterini Vine Tomatoes, amongst others.
We used some mini mozzarella balls for this Tomato, Basil and Mozzarella Salad, but you could quite easily use the regular size mozzarella balls, and just cut them into more manageable pieces.
We just used a simple balsamic vinegar to dress the salad. A tip for getting a nice even coating of balsamic is to wash out an old Low Calorie Cooking Spray bottle, then fill it with balsamic.
You can then store it in the fridge and you’ll have a quick, mess-free dressing on hand whenever you want it.
We like to liven up the mozzarella a little bit, so we decided to toss it in some home made pesto. You could use a shop bought reduced fat version if you wanted to.
Just remember to account for any Syns, Calories or Points in anything you use.

How many Syns are in this Tomato, Basil and Mozzarella Salad?
This salad is Syn Free if you use one of your daily Health Extra A allowances. If you’re using regular, full-fat mozzarella then you can have 50g for one of your Healthy Extra A allowances, or around 5 mini balls (each one weighs around 8-10g but remember to check the weights).
However, you could go for the reduced fat option, which means you could have 70g for one of your HEA’s.
However, if you don’t want to use your HEA then you can just Syn the cheese accordingly.

Our version is just 5 Points per portion, and there’s no compromise on all those tasty, Italian inspired flavours!
How many calories are in this Tomato, Basil and Mozzarella Salad?
This Tomato, Basil and Mozzarella Salad is less than 200 calories – and it is a much more generous portion than a shop bought one, and a fraction of the price to make!
How do I make this Tomato, Basil and Mozzarella Salad?
First, make the pesto for the mozzarella. Place the handful of Rocket, a handful of Basil, garlic clove, sea salt and freshly ground black pepper into a blender and blend until smooth.
You can do this in advance and keep it in the fridge until you’re ready to use it.
If you’re using a big ball of mozzarella weigh out 50g then cut it into even sized cubes. Mix the mozzarella balls (or diced mozzarella) with the pesto and set aside in the fridge while you prepare the salad.
Cut the tomatoes in half and pick some small basil leaves off the stalks, then mix the 2 together.
Place the rocket & watercress mixed leaves in a bowl or on a plate and spray with some balsamic vinegar.
Don’t forget to keep an empty Low Calorie Cooking Spray bottle for the balsamic vinegar!
Arrange the halved tomatoes and basil leaves on top, add the pesto coated mozzarella balls and serve.
