These Turkey Burgers are nothing like the turkey burgers that supermarkets try and “spruce” up with apple and herbs. All you seem to get is a rock of bland, under seasoned, dry meat.
You may look at the ingredients and think this is a bit of an odd mix for a Turkey Burger, but trust us, these burgers are beautiful! Just stick with it, mix everything up really well and trust in the recipe even if you hit a point where you’re unsure. It will be worth it!
Just don’t forget to season really well – and if you like pickles, load them up on top. Pickles bring a great flavour contrast!

How many calories are in these Turkey Burgers?
There are 176 calories per portion in these Turkey Burgers, which means it falls into our Everyday Light category.
These Turkey Burgers are perfect if you’re following a calorie controlled diet, and fits well with any one of the major diet plans such as Weight Watchers.

Step 1
Preheat oven to 200°C. Spray the aubergine with the low calorie cooking spray until coated. Season well with salt and pepper. Wrap with aluminium foil and set on rimmed baking sheet. Roast until completely tender, turning once, about 30 minutes. Allow to cool slightly, remove from foil, and scrape flesh away from skin into a large bowl.

Add soy sauce, anchovy, marmite (or fish sauce) to the aubergine and attack with a stick blender until smooth.

Add the turkey mince and a good pinch of salt and pepper and mix well. It needs to be mixed very very well.

Split mix into 4 and make into patties. Rough patties are fine, the mixture will be fairly wet. Place onto a baking try and bake for 20 minutes. Check centres are piping hot. they won’t have browned much, you can sear them in a hot frying pan for a couple of minutes each side if you like.

Serve on rolls with pickles and sauce.

How do you know when these Turkey Burgers are cooked?

Bake the burgers for 20 minutes then check centres are piping hot. They won’t have browned much, but you can sear them in a hot frying pan for a couple of minutes each side if you like.
Standard advice here in the UK is to cook food until it has reached 70°C and stayed at that temperature for 2 minutes. This is to keep your family safe.
How long can you keep these Turkey Burgers in the fridge?
Once you’ve put them out, ideally you should eat them within 4 hours.
If you allow any leftovers to cool, make sure to refrigerate in a container with a lid and chill. You can keep leftovers of Turkey Burgers in the fridge for approximately 3 days or so.
Can I freeze these Turkey Burgers?
Yes you can! This recipe can be frozen, but please remember to do the following;
- Freeze it as soon as it is cold enough.
- Use a container or bag that is suitable for freezing.
Don’t forget to add a label with what it is, and on what date you put it in the freezer!
How do I reheat these Turkey Burgers?
From chilled: Place in a microwave proof container with loosely fitting lid and heat for 4-7 minutes until piping hot.
From frozen: Allow to defrost, and heat covered in the microwave for 3-5 minutes then stir. Cook for a further 5-7 minutes until piping hot.

I don’t like anchovy. I have marmite. Do I add just fish sauce or marmite and fish sauce.
I’m not sure what the instructions are saying …sorry. Can you clarify please.

Hey Natalie, I’ve just had a read of this recipe and it means to replace both the anchovy and marmite with the fish sauce instead. Hope that helps!

Made these burgers this evening and have to say although I was a bit sceptical of the ingredients, the aubergine ensured that the turkey mince remained lovely and moist after cooking. A definite winner in our house. Thank you
