This classic recipe is one of those dishes that can seem tricky and time consuming to make. Our simple, low calorie version packs in all the French-inspired flavours that you’d expect, using hearty ingredients and a fuss-free method. 

This Instant Pot Beef Bourguignon is on the table in just over an hour, so it’s sure to be your new go-to midweek meal. The flavours are rich and comforting, and it’s packed with tender beef chunks and plenty of veggies. 

To keep our Instant Pot Beef Bourguignon slimming friendly and flavourful we’ve left out the red wine and instead added some red wine stock pots. These are so handy for bringing in those robust flavours, without ramping up the calories. Of course, if you’re not counting calories or following a diet plan like Weight Watchers, you might prefer to leave out the red wine stock pots and add a glass of the real stuff instead. 

If you don’t have an Instant Pot, we also have an oven method for this recipe, as well as a slow cooker method for when you want dinner ready as soon as you step through the door.

Step 1

Spray the Instant pot inner pot with low calorie cooking spray. Sauté the beef for 3-4 minutes, stirring to seal and brown on all sides, then transfer to a plate. Spray the pot again and add the bacon, scraping up any meaty bits from the bottom of the pot and stir in. Sauté for 4 – 5 minutes, stirring, until cooked and lightly browned. Transfer the bacon to the plate with the beef and set aside.

Step 2

Spray the pot again if needed and add the onion. Sauté for 3-4 minutes, stirring, until they soften and turn golden; again scraping up any meaty bits and stirring in. Add the garlic and sauté for a further 1-2 minutes.

Add the carrots and mushrooms and sauté for 4-5 minutes, stirring, to lightly brown. Add the beef and the bacon back into the pot.

Step 4

In a measuring jug, mix the hot stock, red wine stock pots, tomato puree, balsamic vinegar, Worcestershire sauce, parsley, thyme and bay leaves. Stir until the stock pots have dissolved. Pour into the pot and stir into the beef and vegetables.

Step 5

Close the lid on the Instant Pot and lock. Turn the valve to ‘sealing’. Set to pressure cook, high, and set the timer for 30 minutes. After 30 minutes cooking, release the pressure using the quick release function.

Step 6

Remove the lid and add the cornflour and water mixture and stir in evenly. Sauté for 3-4 minutes, stirring, until the gravy is thickened and glossy. Season to taste if needed.

Remove the bay leaves and serve with steamed vegetables or other accompaniments of your choice.

How do you know when Instant Pot Beef Bourguignon is cooked?

You need to let this Instant Pot Beef Bourguignon cook for 30 minutes once all the ingredients have been added. You’ll know it’s ready when the beef is tender and the sauce has reduced to a thick, rich gravy.

Ingredients

  • 500 g diced beef, all visible fat removed
  • 2 tbsp cornflour, mixed with 2 tbsp water
  • 4 smoked bacon medallions, cut into 2cm dice
  • 2 medium onions, peeled and chopped
  • 4 cloves of garlic, peeled and crushed
  • 3 medium carrots, peeled and cut into 1cm thick slices
  • 250 g button mushrooms, halved
  • 300 ml beef stock, 1 beef stock cube made up with 300ml of boiling water
  • 2 red wine stock pots
  • 2 tbsp tomato puree
  • 1 tbsp balsamic vinegar
  • 1 tbsp Worcestershire sauce or Henderson's Relish
  • 1 tsp dried parsley
  • 1 tsp dried thyme
  • 2 dried bay leaves
  • salt and pepper, to taste
