Some days you fancy a fuss-free dinner that still packs in bags of flavour. When you need something that won’t disappoint, these Ginger and Orange Chicken Kebabs will save the day. 

You’ll need to prepare them the night before, just so that the chicken can sit in the marinade in the fridge overnight. This gives it time to soak up the flavour of that zingy fresh ginger and citrusy orange – and it’s well worth the wait. 

Once the chicken is marinated, it’s only a matter of popping it onto a wooden skewer with your veggies and banging it in the oven for 20-30 minutes. We love these served with a side salad or some rice, but you could add chips or roasted Mediterranean vegetables too.

Once the chicken has marinated, thread the chicken, peppers and tomatoes onto 8 skewers in any order you like.

    Ingredients

    For the marinade

    • 260 g diced chicken breast
    • 1 orange, zested and juiced
    • 1 tsp lime juice
    • ½ red chilli, deseeded and finely diced
    • 2 garlic cloves, peeled and crushed
    • 2 cm ginger, peeled and finely grated
    • 2 tbsp honey
    • 1 tbsp soy sauce
    • ½ tbsp rice vinegar
    • ½ tsp onion granules
    • ¼ tsp sriracha sauce
    • 1 spring onion, finely diced

    For the kebabs

    • 2 peppers, deseeded and chopped into chunks
    • 24 cherry tomatoes
    • low-calorie cooking spray
