Preheat the air fryer to 180ºC. Spray the air fryer basket with low-calorie cooking spray and soak the bamboo skewers in water.

Once the chicken has marinated, thread the chicken, peppers and tomatoes onto 8 skewers in any order you like.

Place the 8 skewers into the air fryer basket and cook for 10-15 minutes, until the chicken is cooked through. You may need to do this in batches depending on the size of your air fryer. Serve 2 chicken kebabs per portion with your choice of accompaniment.

    Ingredients

    For the marinade

    • 260 g diced chicken breast
    • 1 orange, zested and juiced
    • 1 tsp lime juice
    • ½ red chilli, deseeded and finely diced
    • 2 garlic cloves, peeled and crushed
    • 2 cm ginger, peeled and finely grated
    • 2 tbsp honey
    • 1 tbsp soy sauce
    • ½ tbsp rice vinegar
    • ½ tsp onion granules
    • ¼ tsp sriracha sauce
    • 1 spring onion, finely diced

    For the kebabs

    • 2 peppers, deseeded and chopped into chunks
    • 24 cherry tomatoes
    • low-calorie cooking spray

    Instructions
