Tangy, crumbly and oh-so-delicious, we can’t get enough of feta cheese. From vibrant Mediterranean-style sides and mains, to leafy lunches, you know that wherever there’s feta…your cooking is going to taste even better!
If you’ve got a block of reduced-fat feta (or Greek-style cheese!) ready and waiting in the fridge and you’re not sure how to transform it into a lower-calorie meal, you’re in the right place.
While cheese isn’t always the most slimming-friendly ingredient, we’ve had lots of practice recreating our favourite feta-tastic feasts using reduced-fat swaps and alternatives – so you can curb your cravings and stay on track.
Greek Salad
You’ll find all the colours of a Mediterranean getaway in our Greek Salad. The perfect complement for our zingy, homemade dressing, this one’s not finished without a flourish of salty feta-style cubes on top (we’ve used cubes of reduced-fat Greek-style cheese).
Traditional vinaigrette is typically made with lashings of olive oil, and our recipe skips it altogether with a few nifty swaps, like pickling liquid and lemon juice.
Our top tip for this recipe is to make more dressing than you need – it’s too yummy not to add an extra drizzle on top after serving, and it’ll refrigerate nicely to give your lunches a boost for a few more days!
Greek-style Pasta Salad
Just when you think pasta salad can’t get any better, along comes our game-changing Greek-style Pasta Salad recipe. We’re talking about all the best flavours from Mediterranean-style cuisine, including crispy, colourful salad veg, olives and reduced-fat feta, tossed together with your favourite pasta.
We’ve used fusilli, but there’s nothing to stop you making the most of different readily-available pasta shapes from your store cupboard. Smaller pasta shapes tend to work best as they’re great at soaking up every last drop of our zesty, homemade dressing…
Summer Pineapple, Lime, Feta and Quinoa Salad
There’s no argument for calling salads boring with our Summer Pineapple, Lime, Feta and Quinoa Salad in the mix. Feta is delightful at bringing out the best of juicy, fruity flavours, and we can’t get enough of how well it enhances the sweet zinginess of pineapple and lime in this summertime staple.
To make our salad light and filling, we’ve paired our crunchy fruit and veg with fluffy, protein-packed (and totally gluten-free!) quinoa. That means it’s hearty enough to tuck into all on its own for lunch, or it’ll easily take freshly-grilled mains up a notch as a barbecue side dish.
Sweet Potatoes with Feta and Harissa
Take a break from standard baked potatoes and serve up our Sweet Potatoes with Feta and Harissa instead. Bundled up in gorgeously crisp potato skin jackets, these oven-baked spuds come brimming with Middle Eastern-inspired flavours you’ll want to taste time and time again.
We’ve kept things deceptively simple with only sweet potatoes, reduced-fat feta cheese, harissa paste and finely-chopped spring onions on the super short ingredients list.
Once the potatoes are cooked through and tender, that’s your cue to add a crumbly topping of reduced-fat feta. It’s a match made in heaven with the harissa paste’s rich smokiness.
Roasted Red Pepper and Feta Soup
If you’re in the mood for comfort food, try cuddling up to a bowl of Roasted Red Pepper and Feta Soup. Sweet, smokey and tangy, this scrummy soup is too good to only enjoy once.
Since it’s fridge and freezer friendly, you can take this batch-cook dream on-the-go in a soup flask, or reheat it at a moment’s notice on chillier days at home.
It’s up to you if you add a sprinkling of fresh herbs right before serving, but we’d say a crusty wholemeal bread roll is non-negotiable – it’d be rude not to wipe the bowl clean!
Mediterranean-Style Stuffed Peppers
Bright, colourful and jam-packed with flavour, you need to try our Mediterranean-Style Stuffed Peppers in the sunshine. Inspired by vibrant stuffed vegetables from Lebanon, Greece and Turkey, we’ve filled our peppers with beef, bulgur wheat, handfuls of dill and parsley.
Once the peppers are stuffed, you can leave them bubbling away in the oven on a bed of rich garlic-infused tomato sauce.
Don’t forget to add a topping of crumbled feta right before serving – it’ll take the zinginess of your lemon-infused filling to a whole other level!
Roasted Vegetable and Feta Couscous
We love getting creative with couscous. An easy, store cupboard ingredient that’s just as versatile as rice or pasta, we discovered our Roasted Vegetable and Feta Couscous while we were playing around with mildly-spiced, smoked chipotle flavours.
Root veg bakes really well and soaks up flavours like a dream, so we’ve coated our chunks of sweet potato, butternut squash, sliced peppers and onions in a moreish marinade of chipotle paste and honey.
Add feta, rocket and a sprinkling of chopped walnuts for a fantastically fluffy feast!
Beef and Feta Burgers
Regular cheeseburgers will be old news once you’ve tried our Beef and Feta Burgers! Ideal for your next family burger night-in, we’ve loaded these patties up to be extra juicy and satisfying for only 382 calories per serving.
With onion, garlic and olives mixed into the patties, they’re primed with the perfect flavours for pairing with our creamy feta-infused dressing. By using a homemade blend of reduced-fat feta cheese, fat-free Greek yoghurt and a hint of mint sauce, we’ve made things slimming friendly, without spoiling the fun.
If you’re a burger lover who prefers lots of sauce, a small dollop of ketchup or salsa tastes great with this recipe – just be sure to take note of the extra calories, if you’re keeping track!
Strawberry and Feta Salad
Nothing says sunny weather quite like our Strawberry and Feta Salad. Just as tasty as it is colourful, we’ve combined fresh peppery rocket leaves with sweet strawberries and crunchy pine nuts.
To cut through the sweetness, we’ve teamed up tangy feta pieces with a super simple, zingy homemade salad dressing.
Perfect for warm evenings or entertaining guests with afternoon tea, we think it’s at its best served alongside your fresh-from-the-grill favourites – try it with meat, fish or any barbecued vegetarian alternative and let us know if you agree!
Blackened Salmon and Zingy Salad
Our Blackened Salmon and Zingy Salad is what happens when you fancy a salmon-based dinner that’s a little bit different. The salmon is ‘blackened’ by an aromatic home-style spice mixture that chars in the pan to form a sealed crust of fragrant spices.
Ready to serve in 20 minutes, it’s just the ticket over a colourful bed of carrot, avocado, sweetcorn and spring onion. As if that’s not enough flavour, we’ve finished things off with a Mexican-inspired squeeze of lime and a garnish of red chilli, feta cheese and coriander.
