We love pesto and salmon so much on their own, we’re surprised this Salmon Pesto Salad didn’t happen sooner. An utterly delicious combination, we’ve not stopped at creating a zesty, garlicky marinade for the fillets, we’ve made a lower-calorie, pesto-flavoured salad dressing too!
We’ve tossed together a medley of vibrant, crunchy vegetables to make a tasty, eye-catching bed of salad for the fillets to rest on. Think leafy greens, juicy tomatoes, peppery radishes and a flourish of crunchy, satisfying pine nuts…

This Salmon Pesto Salad recipe is ideal when following any of the larger diet plans such as Weight Watchers or counting calories.

Step 1
In a small bowl, combine the pesto, lemon juice, garlic and season with a little salt and pepper.

Add the salmon to a bowl and pour over the marinade. Coat the salmon, cover and pop into the fridge for 30 minutes.
Step 3
Add the pine nuts to a small frying pan and set on a low heat. Heat for 2 minutes until the pine nuts are lightly toasted and golden. Leave to one side.
Step 4
Assemble the salad. Divide the lettuce, tomatoes and radish between two plates. In a small bowl, combine the pesto, lemon juice and cream cheese, and stir to combine.
Step 5
Once the salmon has marinated, spray a frying pan with low-calorie cooking spray. Set on a medium heat. Cook the salmon for 4 minutes on each side. It should be just turning crispy on the surface.
Step 6
Add the salmon to the top of the salad, drizzle over the dressing and sprinkle with the pine nuts. Serve!

How do you know when Salmon Pesto Salad is cooked?
You’ll know the pesto-marinated salmon fillets are ready to serve once they’ve cooked until crispy on the surface. This will take around 4 minutes of pan-frying on either side.
Make sure the fillets are flaky and piping hot throughout before serving.
