Add the stock and milk to the pan and stir. In a small bowl, mix the cornflour and cold water to form a smooth slurry. Pour into the pan and simmer for 3-4 minutes, stirring constantly — until the sauce has thickened.

Remove from the heat and stir in the cheese, mustard, cooked potatoes, and peas. Season with freshly ground black pepper, to taste. Sprinkle the dried stuffing mix over the top, then place in the oven for 15-20 minutes until bubbling and crisp and golden on top. Serve!

Ingredients

  • 700 g new potatoes, halved or quartered (depending on their size)
  • low-calorie cooking spray
  • 1 medium onion, peeled and diced
  • 2 smoked gammon steaks (approx 225g each, visible fat and rind removed, cut into 2cm chunks)
  • 250 ml chicken stock (1 low-salt chicken stock cube dissolved in 250ml boiling water)
  • 250 ml skimmed milk
  • 2 tbsp cornflour
  • 2 tbsp cold water
  • 100 g reduced-fat mature Cheddar cheese, grated
  • 2 tsp wholegrain mustard
  • 80 g frozen peas
  • freshly ground black pepper, to taste
  • 40 g dried sage and onion stuffing mix

Recipe notes

Tip 1: There's no need to season this dish with salt as gammon is already salty. To check just how salty your gammon is, cut a small piece and fry it until cooked. Then taste it and decide if it suits your taste or if it's too salty. If it is too salty, you can soak the gammon in cold water to remove the excess saltiness. Discard the water before starting the recipe.
Tip 2: Make sure to use new potatoes as they'll hold their shape during cooking; other varieties may break up.
