This Herby Lemon Chicken Salad is really light and fresh which makes it perfect for a light lunch when served with a bread roll, or with a side dish as part of an evening meal.

The chicken is flavoured with lemon and lots of herbs including sumac, which has a really lovely tart, citrus taste. If you’ve never used sumac before then it’s guaranteed to become one of your staple spices. It’s the perfect partner for a really wide variety of different foods including fish, poultry and vegetables.

Ingredients

  • 2 chicken breasts
  • 10 g fresh oregano chopped
  • 10 g fresh thyme leaves only, chopped
  • 1/2 tsp dried sage
  • 1/2 tsp dried parsley
  • 1/2 tsp sumac
  • 1/2 tsp black pepper
  • 100 g spring onion chopped
  • 100 g mixed lettuce leaves
  • 200 g cherry tomatoes halved
  • 1 red pepper deseeded and sliced
  • 1/2 cucumber sliced
  • 2 lemons zested and juiced
  • 1 lemon cut into wedges
  • salt and pepper to taste
  • low calorie cooking spray
