Fish is super low in calories but packs a protein punch to keep you feeling fuller for longer which makes it the ideal choice for those on a slimming journey.

We’ve topped our cod steaks with some low fat cream cheese to help make it taste really indulgent without adding loads of unnecessary calories or Points. The crispy crust is full of tasty herbs and garlic which adds a nice little pop of flavour and complements the cheese and fish perfectly.

Our Herb Crusted Cod is a fantastic summer dish and a great alternative to a meat dish. Serve with some steamed vegetables or some fluffy rice for a light dinner that’s quick and easy to make but looks delicious on a plate!

Place the fish into the ovenproof dish and spread the cream cheese over the top of each piece. Season well with salt and pepper.

Spoon the herb crust mixture over each piece of fish, pressing it down lightly.

Place uncovered in the oven for 25 – 30 minutes, until the fish is cooked through. The fish should flake in the middle when it is cooked.

Ingredients

  • 4 skinless, boneless cod fillets around 170g each
  • 4 tbsp low fat cream cheese

For the herb crust

  • 50 g wholemeal bread
  • 20 g Parmesan cheese finely grated
  • 1/4 tsp mustard powder
  • 1 clove of garlic finely chopped
  • 1 lemon zested
  • 5 g chives chopped
  • 5 g curly parsley chopped
  • salt and pepper to taste
  • low calorie cooking spray
  • extra chopped parsley to garnish optional
